Ферментисане кобасице на нашим просторима имају дугу производну традицију. Производе се у
индустријским и занатским објектима, a такође и у домаћинствима. Разумљиво је да, с обзиром на
место производње, услови производње, нарочито они који се односе на процесе зрења, могу бити
контролисани (климатизоване коморе), који се везују се за индустријске објекте и један део занатских
објеката, и неконтролисани услови, који се везују за зрење у домаћинствима у току зимског периода.
С обзиром на разлике у традицији које су везане за поједине крајеве, локалитете или чак села,
разумљиво је да има разлика у самом начину израде кобасица (избор и обрада меса, степен
уситњавања, избор зачина итд.) и поступцима зрења (сушење и димљење). Међутим, основни
принципи израде ових кобасица су универзални.
Sausages in our region have a long manufacturing tradition. Products in the industry and manufactures,
also in households. It is understandable that with regard to the place of manufacture, production conditions,
especially those related to processes of maturation, can be controlled (air-conditioned chambers), which are
related to industrial facilities and one of craft objects and uncontrolled conditions, which are associated with
ripening in households in the winter.
Given the differences in traditions that are tied to particular regions, localities, or even villages, it is
understandable that there are differences in the way of making sausage (the selection and processing of meat,
the degree of fragmentation, the selection of spices, etc.), and ripening processes (drying and smoking). But
the basic principles of making these sausages are universal.
