Mikrobiološka ispravnost hrane životinjskog porekla u ugostiteljskim objektima na području Beograda

Храна животињског порекла може да буде контаминирана патогеним бактеријама. Микроорганизми у храни могу да изазову инфекције или интоксикацијe токсинима, који су продукт њиховог метаболизма. Микроорганизми у намирницама се уништавају поступком
прераде хране, као што је топлотна обрада, док токсини могу да остану и уколико микроорганизми нису присутни у намирници. Кон-тролом хране у производњи и промету, „од њиве до трпезе» се процењује ризик који намирнице могу да имају по здравље конзумената
са циљем да се ризик отклони пре него што дође до последица.
Циљ рада је био да се испита микробиолошка исправност хране животињског порекла у угоститељским објектима на подручју Београда,
Република Србија. Испитано је укупно 60 узорака хране животињског порекла (25 узо-
рака сушија, 10 узорака сендвича и 25 узорака сладоледа-15 узорака
из занатских објеката и 10 узорака из покретних аутомата за продају
сладоледа). Микробиолошка испитивања су вршена према Правилнику о општим
и посебним усл...овима хигијене хране у било којој фази произ-
водње, прераде и промета («Службени гласник РС», бр. 72 /2010,
62 / 2018). За доказивање Listeria monocytogenes у узорцима сушија,сендвича и сладоледа коришћена је SRPS EN ISO 11290-1:2017 мето-
да; За доказивање Salmonella spp. у узорцима сладоледа је коришћена
SRPS EN ISO 6579-1:2017 метода; За испитивање критеријума хи-
гијене процеса производње узорци сладоледа су испитани на при-
суство Enterobacteriacae и коагулаза позитивне стафилококе. За
доказивање Enterobacteriacae коришћена је SRPS ISO 21528-2:2017
метода, а за доказивање коагулаза позитивних стафилокока SRPS EN
ISO 6888-1:2009 метода.
Добијени резултати су показали од укупно 60 испитаних узорака
хране пореклом из угоститељских објеката 4 (6,67%) не испуњава
критеријуме хигијене процеса производње, јер је у 4 сладоледа (1
узорак сладоледа из занатског објекта и 3 узорка из покретних ау-
томата за продају сладоледа) доказано присуство Enterobacteriacae
више од 100 cfu/g. Ни у једом узорку сладоледа нису доказане коагу-
лаза позитивне стафилококе.
Ни у једном испитаном узорку сушија, сендвича и сладоледа није до-
казано присуство Listeria monocytogenes, док ни у једном узорку сла-
доледа није доказано присуство Salmonella spp.
Може се заклључити да је испитана храна животињског порекла из
угоститељских објеката на подручју Београда безбедна по потроша-
че, јер су испуњени критеријуми безбедности прописани важеђом
законском регулативом. Четири узорка сладоледа нису испуњавала
критеријуме хигијене процеса производње. Наложена је мера по-
бољшања хигијене процеса производње сладоледа, који се производи
у занатском објекту и покретним аутоматима за продају сладоледа.
Food of animal origin can be contaminated with pathogenic bacteria.
Microorganisms in food can cause infections or intoxications by toxins,
which are a product of their metabolism. Microorganisms in food are
destroyed by food processing, such as heat treatment, while toxins can
remain even microorganisms are not present in the food. Food control
in production and trade, “from the field to the table”, assesses the risk
that food may have for the consumers health in order to eliminate the
risk before the consequences occur.
The aim of this research was to examine the microbiological safety
of food of animal origin in catering facilities in the area of Belgrade,
Republic of Serbia.
A total of 60 samples of food of animal origin were examined (25
samples of sushi, 10 samples of sandwiches and 25 samples of ice cream
- 15 samples from craft facilities and 10 samples from mobile vending
machines for ice cream).

production, processing and trade (“Official Gazette of RS”, No. 72/2010,
62/2018). SRPS EN ISO 11290-1: 2017 method was used to detect
Listeria monocytogenes in samples of sushi, sandwiches and ice cream;
For detection of Salmonella spp. in ice cream samples SRPS EN ISO 6579-1: 2017 method was used; In aim to examine the hygiene criteria of
the production process, ice cream samples were tested for the presence
of Enterobacteriaceae and coagulase-positive staphylococci. The SRPS
ISO 21528-2: 2017 method was used to detect Enterobacteriaceae, and
the SRPS EN ISO 6888-1: 2009 method was used to detect coagulasepositive staphylococci.
The obtained results showed that out of 60 examined samples of
food originating from catering facilities, 4 (6.67%) did not meet the
criteria for hygiene of the production process, because in 4 samples of
ice cream (1 sample of ice cream from a craft facility and 3 samples
from mobile ice cream vending machines) was detected the presence
of Enterobacteriaceae more than 100 cfu/g. Coagulase-positive
staphylococci were not detected in none of ice cream samples.
The presence of L.monocytogenes was not detected in none of tested
samples of sushi, sandwiches and ice cream, while the presence of
Salmonella spp. was not detected in none of samples of ice-cream.
It can be concluded that analysed food of animal origin from catering
facilities in the area of Belgrade is safe for consumers, because the
safety criteria prescribed by the applicable legislation have been met.
Four samples of ice cream did not meet the criteria for hygiene of the
production process. To improve the hygiene of the ice cream production
process, which is produced in a craft facility and mobile ice cream
vending machines measures have been ordered.
