Стафилококе се као убиквитарни микроорганизми налазе на кожи људи и животиња, а често колонизује ductus papillaris млечне жлезде музних животиња. Овај микроорганизам, први пут описан пре два века, заокупља пажњу научне јавности и често је незиван суперпатогеном због способности да ствара егзоцелуларне ензиме и токсине. На основу способности за стварање ензима коагулазе, разликују се каогулаза позитивне стафилококе (КПС) и коагулаза негативне стафилококе (КНС). КПС имају вишеструки значај. У контексту безбедности хране значај се о огледа у могућности да изазову алиментарне интоксикације људи конзумирањем хране која саджи довољну количину ентероктоксина и здравствени значај, јер изазивају маститисе код музних животиња. Стафилококе имају способност да стварају високо организоване комплексе, који се називају биофилмови и који су препознати као важан фактор вируленције стафилокока. Ове комплексне бактеријске структуре пријањају на површине и уроњене су у екстрацелуларни матрикс. Улога матри...кса је комплексна, укључујући снабдевање хранљивим материјама и заштита од стресног утицаја спољашње средине. У последње две деценије дефиниција биофилма се мењала, јер су се нова истраживања надограђивала нa постојећа знање о формирању, структури, матурацији и резистенцији биофилма. Биофилм се данас дефинише као структурна заједница микроорганизама, који су иреверзибилно везани за супстрат и уклопљени у матрикс екстрацелуларне полимерне супстанце коју сами продукују, а који показују измењени фенотип услед промене брзине раста и транскрипције гена. Механизми стафилокока за стварање биофимова су сложени и обухватају учешће различитих врста протеина и великог броја гена. Будући да се способност стварања биофилма истиче као значајан фактор вируленције за успостављање перзистентних инфекција млечне жлезде, што сам биофилм штити бактеријску заједницу од антимикробних лекова, на тај начин умањујући успех антимикробне терапије и што стварање биофилма на површинама, које долазе у контакт са храном током процеса добијања хране, представљајући извор конатминације циљ овог прегледног рада је да се укаже на значај способости стафилокока да стварају биофилм.
Staphylococci as ubiquitous microorganisms are found on the human and animals skin, and often colonize ductus papillaris in mammary glands of dairy animals. This microorganism, first described two centuries ago, occupies the attention of the scientific community and it is often named as a superpathogen due to its ability to form exocellular enzymes and toxins. Based on the ability for synthesis of the enzyme coagulase there are coagulase-positive staphylococci (CPS) and coagulase-negative staphylococci (CoNS). CPS are of multiple significance. In the context of food safety, importance is reflected to the possibility of causing food poisoning of people ingesting food that contains a sufficient amount of enterotoxins and health significance is due to the possibility of causing mastitis in dairy animals. Staphylococci are chatacтerized by the ability to form highly organized complexes, called biofilms,recоgnized as an important factor of the virulence of staphilococci. These complex bacte...rial structures adhere the surfaces and are embedded in the extracellular matrix. The role of the matrix is complex, including the supply by nutrients and protection against environmental stress impacts. In the last two decades, the definition of biofilm had been changing, because the new research were upgradeing the existing knowledge on the formation, structure, maturation and resistance of biofilm. The biofilm is currently defined as a structural community of microorganisms irreversibly attached to a substrate and embedded in a matrix of extracellular polymeric substances which themselves produce, and which exhibit modified phenotype due to changes in the growth rate and gene transcription. The mechanisms of biofilm formation in staphylococci are complex and include the participation of various proteins and a large number of genes. Since the ability to form biofilms represent a significant factor in virulence for the establishment of persistent infections of the mammary gland and biofilm protects the bacterial community of antimicrobial drugs, thereby reducing the success of antimicrobial therapy and the formation of biofilms on surfaces, that come into contact with food during the production process of food representing a source of contamination, the aim of this review paper is to highlight the importance of ability to form biofilm in staphylococci.
