Значајан број врста биљака се због својих ароматичних својстава употребљава за
производњу зачина. Као зачини користе се различити делови биљака: ризом,
луковица, корен, лист, кора стабла, цвет, плод, семе или цела биљка. У њима се
налазе ароматичне материје које потичу од етарских уља, која одређују финоћу и
оригиналност мириса. Етарска уља садрже различите активне материје,
алкохоле, алдехиде, кетоне, угљоводонике, терпене, феноле, естре или једињења
сумпора.
Међутим, зачини и зачинске биљке, које се гаје углавном у тропским и
субтропским областима, могу бити изложене контаминацији плеснима, а
последично и микотоксинима. Доказано је да су плесни у зачинима перманентно
заступљене што је велики проблем ако се зна да се зачини интензивно користе као
значајни додаци храни у кулинарству и приликом индустријске прераде меса.
Најзначајнији продуценти микотоксина у зачинима су врсте плесни из три рода:
Aspergillus, Penicillium и Fusarium, али у многим зачинима су присутне и врсте... из
рода Alternaria и Rhizopus.
Микотоксини у организму доводе до акутних интоксикација и хроничних
токсикоза, тако да свако присуство плесни у зачинима представља потенцијалну
опасност по здравље људи. Обзиром да се врло тешко елиминишу, појачава се
невидљиво кумулативно и дуготрајно разорно дејство на ћелије виталних органа.
У последњих пет година објављено је око 150 радова на тему микотоксина у
зачинима и око 130 радова на тему плесни у зачинима. Испитано је 38 врста
зачина и 17 врста микотоксина. Највише су изучавани млевена паприка, црни
бибер, ђумбир, мускатни орах, коморач, цимет, куркума и тимијан. Утврђено је
присуство следећих микотоксина: афлатоксини (B1, B2, G1, G2), охратоксин А,
цитринин, зеараленон, фумонизини (B1, B2), трихотецени (DON, NIV, T-2, HT2), алтернариа токсини (ALT, AOH, TEA) и стеригматоцистин.
Due to its aromatic properties, a significant number of plant species are used for the
production of spices. Different parts of plants are used as spices: rhizome, bulb, root,
leaf, tree bark, flower, fruit, seed or whole plant. They contain aromatic substances
derived from essential oils, which determine the fineness and originality of the
fragrance. Essential oils contain various active substances, alcohols, aldehydes,
ketones, hydrocarbons, terpenes, phenols, esters or sulfur compounds.
However, spices and herbs, which are grown mainly in tropical and subtropical areas,
can be exposed to mold and, consequently, mycotoxins. It has been proven that molds
in spices are permanently present, which is a big problem if it is known that spices are
intensively used as significant food additives in culinary and industrial meat
processing. The most significant producers of mycotoxins in spices are mold species
from three genera: Aspergillus, Penicillium and Fusarium, but species fro...m the
genus Alternaria and Rhizopus are also present in many spices.
Mycotoxins in the body lead to acute intoxications and chronic toxicosis, so that any
presence of mold in spices represents a potential danger to human health. Since they
are very difficult to eliminate, the invisible cumulative and long-lasting destructive
effect on the cells of vital organs is intensified.
In the last five years, about 150 papers on the topic of mycotoxins in spices and about
130 papers on the topic of molds in spices have been published. 38 types of spices and
17 types of mycotoxins were tested. The most studied are ground pepper, black
pepper, ginger, nutmeg, fennel, cinnamon, turmeric and thyme. The presence of the
following mycotoxins was determined: aflatoxins (B1, B2, G1, G2), ochratoxin A,
citrinin, zearalenone, fumonisins (B1, B2), trichothecenes (DON, NIV, T-2, HT-2),
alternaria toxins , AOH, TEA) and sterigmatocystin.
