dc.description.abstract | Ishrana predstavlja važan činilac u očuvanju zdravlja životinja i postizanju maksimalnih proizvodnih performansi, kao i u proizvodnji bezbednih namirnica animalnog porekla, što je u suštini i krajnji cilj držanja i ishrane životinja. Pod kvalitetom hrane za životinje podrazumevaju se poželjna senzorska svojstva, optimalan hemijski sastav i zadovoljavajuće higijensko stanje. Bezbednost hrane za životinje, kao sastavni deo koncepta „Jedno zdravlje“, uključuje aspekt neškodljivosti i za životinje i za ljude. Termin prvenstveno označava kontaminaciju hrane bakterijama, plesnima i parazitima hrane, zatim metabolitima živih agenasa prisutnih u hrani, kao i prisustvo različitih organskih i neorganskih štetnih sastojaka (semena otrovnih biljaka, teški metali, metaloidi, hormoni, antibiotici, pesticidi i drugi). Prijem sirovina u fabrikama hrane za životinje, kao prva karika u lancu proizvodnje bezbedne hrane, sastoji se iz ustaljenih procedura čiji je cilj prepoznavanje potencijalnog rizika i prisustva štetnih materija u hrani. Senzorska svojstva (organoleptička) predstavljaju čulnu percepciju i ocenu kvaliteta hrane za životinje, pomoću koje stičemo prvi utisak o bezbednosti. U slučaju sumnje na narušen kvalitet hrane za životinje, moguće je upotrebiti određene fizičko-hemijske metode čija je svrha determinacija potencijalnih hazarda u hrani. Neophodno je vršiti kontinuirani i višestepeni monitoring hrane za životinje, kao i edukaciju svih subjekata uključenih u lanac proizvodnje hrane za životinje. | sr |
dc.description.abstract | Nutrition is an important factor in maintaining animal health and achieving maximum production performance, as well as in the production of safe foods of animal origin, which is essentially the ultimate purpose of keeping and feeding animals. The feed quality includes desirable sensory properties, optimal chemical composition and satisfactory hygienic condition. Feed safety, as an integral part of the “One Health” concept, includes the aspect of safety for both animals and humans. The term primarily means contamination of feed with bacteria, molds and parasites, then metabolites of living agents present in feed, as well as the presence of various organic and inorganic harmful ingredients (seeds of poisonous plants, heavy metals, metalloids, hormones, antibiotics, pesticides and others). Receiving of raw materials in feed factories, as the first link in the chain of safe food production, consists of established procedures aimed to recognize the potential risk and the presence of harmful substances in feed. Sensory properties (organoleptic) represent sensory perception and assessment of feed quality, and thus we get a first impression of safety. In case of suspicious feed quality, it is possible to use certain physico-chemical methods whose purpose is to determine potential hazards in feed. It is necessary to perform continuous and multi-level monitoring of feed, as well as education of all subjects involved in the chain of animal feed production. | sr |
