AB  - Кулен је један од најквалитетнијих производа од меса који се сврстава у групу ферментисаних кобасица. Традиционално се производи у домаћинствима као занатски производ, а производи се и у
индустријским условима. За израду кулена користи се квалитетно
свињско месо (бут, плећка) и чврсто масно ткиво (леђна сланина).
Циљ овога рада био је упоредна анализа одабраних параметара квалитета индустријски произведеног кулена различитих произвођача на
тржишту Босне и Херцеговине. Поређени су параметри квалитета три
кулена која су произведена у БиХ, један произведен у Србији и један
у Црној Гори. Просечан садржај воде у кулену био је од 20,55% до
35,09%, масти 33,30-46,89%, протеина 20,63-31,43% и пепела 6,07-
6,37%. У већини случајева поређења утврђена је статистички значајна
разлика између појединих хемијских параметара квалитета узорака
испитиваних кулена. Просечне pH вредности кулена биле су од 5,43
до 5,53, а врeдности активности воде од 0,844 до 0,890. Утврђене
су статистички значајне разлике између просечних pH вредности,
односно просечних вредности активности воде испитивних узорака
кулена пет различитих произвођача са тржишта БиХ.
Укупна просечна сензорна оцена узорка кулена са подручја БиХ
(максимално 20 поена) била је од 12,63 до 16.65, изражена као збир
просечних оцена за спољни изглед (max 1 поен), изглед пресека (маx
2 поена) а мирис, укус, арома, конзистенција и структура (max по 3 поена свака особина). На основу добијених података може да се
закључи да је квалитет кулена на тржишту БиХ веома варијабилан.
AB  - Kulen is one of the highest quality meat products that belong to the
group of fermented sausages. It is traditionally produced in households
as a handicraft product, and it is also produced in industrial conditions.
Quality pork (thigh, shoulder) and firm fatty tissue (back bacon) are
used to make kulen. The aim of this study was a comparative analysis of
selected quality parameters of industrially produced kulen from different
manufacturers in the market of Bosnia and Herzegovina. The quality
parameters of three kulen produced in BiH, one produced in Serbia
and one in Montenegro were compared. The average water content in
kulen was from 20.55% to 35.09%, fats 33.30-46.89%, proteins 20.63-
31.43% and ash 6.07-6.37%. In most cases of comparison, significant
difference was found between individual chemical parameters of the
quality of samples of tested kulen. The average pH values of kulen were
from 5.43 to 5.53, and the values of water activity from 0.844 to 0.890.
Significant differences were found between the average pH values, ie
the average values of water activity of the test samples of kulen from
five different producers from the BiH market.
The total average sensory score of the sample of kulen from BiH
(maximum 20 points) was from 12.63 to 16.65, expressed as the sum
of average scores for external appearance (max 1 point), cross-sectional
appearance (max 2 points) and smell, taste, aroma, consistency and structure (max. 3 points each feature). Based on the obtained data, it
can be concluded that the quality of kulen on the BiH market is very
variable.

AB  - Исхрана кока носиља има значајну улогу за њихово здравствено и
кондиционно стање, као и за производне резултате. Задовољавајући
производни резултати могу да се остваре употребом нутријената који
осигуравају енергетске потребе, потребе у протеинима (аминокисе-
лине), витаминима и минералима. Основна сировина у исхрани кока
носиља је најчешће кукуруз (преко 50%), сојина и сунцокретова сачма,
сточна креда, сточни квасац и премикс (витамини, аминокиселине,
макро и микроелементи). Циљ овог рада био је да се испита утицај
сојиног уља (1,5% К0 група) и замене сојиног уља и дела кукуруза
ланеним уљем (К1 1,5%, К2 3% и К3 4,5%) на производне резултате
кока носиља хибрида Isa Brown (просечна маса на почетку и крају
огледа, просечан прираст, потрошња хране, просечан дневни број
и проценат снешених јаја и просечна маса јаја). Оглед је трајао 70
дана (од 155. до 220. дана старости). Просечна маса кока носиља на
почетку огледа била је уједначена, а на крају огледа била је већа
код К3 групе у односу на остале испитиване групе. Просечан при-
раст био је од 88,50 г (К0) до 114 г (К3 група). Утрошак хране био
је 120,15 г код К0 групе и 115,38 г код К2 групе. Просечан дневни
број снешених јаја био је од 37,27 (К0 група) до 38,83 (К2 група),а изражено у процентима био је од 93,11% (К0 група) до 97,19 (К2
група). Између просечног дневног броја снешених јаја и просечног
броја јаја изражених у процентима утврђене су статистички значајне
разлике (р<0,01) између поређених група. Просечна маса јаја била
је од 58,13 г (К1 група) до 60,34 (К3 група). Утврђене су статистички
значајне разлике (р<0,01) између поређених просечних маса јаја кока
носиља поређених група. Добијени резултати указују на чињеницу
да избор уља у исхрани кока носиља утиче на производне резултате.
AB  - The diet of laying hens plays a significant role in their health and fitness,
as well as in their production results. Satisfactory production results
can be achieved by using nutrients that provide energy needs, protein
needs (amino acids), vitamins and minerals. The basic raw materials in
the diet of laying hens are most often corn (over 50%), soybean and
sunflower meal, fodder chalk, fodder yeast and premix (vitamins, amino
acids, macro and microelements). The aim of this study was to examine
the impact of soybean oil (1.5% K0 groups) and the replacement of
soybean oil and corn with flaxseed oil (K1 1.5%, K2 3% and K3 4.5%)
on the production results of laying hens hybrid Isa Brown (average
weight at the beginning and end of the experiment, average growth,
food consumption, average daily number and percentage of eggs laid
and average egg weight). The experiment lasted 70 days (from 155 to
220 days of age). The average weight of laying hens at the beginning
of the experiment was uniform, and at the end of the experiment it
was higher in the K3 group compared to the other examined groups.
The average increase was from 88.50 g (K0) to 114 g (K3 group). Food
consumption was 120.15 g in the K0 group and 115.38 g in the K2
group. The average daily number of laid eggs ranged from 37.27 (K0
group) to 38.83 (K2 group), and expressed as a percentage ranged from
93.11% (K0 group) to 97.19 (K2 group). Significant differences (p<0.01) between the compared groups were found between the average daily
number of laid eggs and the average number of eggs expressed as a
percentage. The average egg weight was from 58.13 g (K1 group) to
60.34 (K3 group). Significant differences (p<0.01) were found between
the compared average weights of laying hen eggs of the compared
groups. The obtained results indicate the fact that the choice of oil in
the diet of laying hens affects the production results.

AB  - Selection of optimal hybrid of Pekin duck and housing system could improve yield and quality of duck meat. The aim of this study was to investigate the effects of two rearing systems (intensive vs semi-intensive housing) on growth performance, carcass quality, and selected physical meat quality traits of two commercial strains of Pekin ducks. The study was performed on 240 one-day-old Pekin ducklings of two different strains (120 ducklings of STAR 53 medium hybrid and 120 ducklings of SM3 heavy hybrid) during a 49-day period. Half the birds (120) were reared in a complete confinement system on a floor (intensive system), while the remaining 120 ducks had access to land outside (semi-intensive system). Growth performance of ducks was determined by BW, weight gain, feed intake, and feed conversion ratio (FCR), carcass quality by dressing percentage, percentage of basic cuts in carcasses, and content of various tissues in basic cuts, while meat quality was determined by pH, drip loss, cooking loss, Warner-Bratzler shear force, and color (L*, a*, and b*) values. At the end of the study, SM3 heavy hybrid and STAR 53 hybrid Pekin ducks achieved similar BWs. Higher final BW and lower overall FCR were found in ducks reared in the intensive system than in ducks kept in the semi-intensive system. Higher dressing percentage, weight and percentage of breast, but also a lower percentage of back with pelvis in the carcasses were determined in SM3 hybrid ducks than in STAR 53 hybrid ducks. The strain of duck did not affect meat pH, drip loss, or L* color value. Moreover, housing system affected the physical meat quality of the ducks, since breasts from ducks reared in the semi-intensive system had higher initial meat pH, higher percentage of EZ-drip loss and cooking loss, and higher L*, a*, and b* values than did breasts from intensively-reared ducks. In conclusion, SM3 ducks were more suited for broiler production due to their better carcass quality than STAR 53 ducks. Furthermore, ducks reared in the intensive system had better growth performance results and better physical meat quality traits than did ducks from the semi-intensive system.

AB  - Although the nutritional value of eggs in human nutrition is well known, efforts are
still being made to increase it. That can be achieved by selecting nutrients and
supplements for laying hens feed rations. The aim of this study was to examine the
effect of different amounts of flaxseed oil in the diet of laying hens on the fatty acid
composition of eggs. To achieve that goal, experimental groups (three groups) of
laying hens were supplemented with 1.5%, 3% and 4.5% flaxseed oil (as a substitute
for corn). The control group of laying hens was fed without the addition of flaxseed oil.
Feed rations were formulated according to recommendations for the ISA Brown
hybrid. Each group comprised 40 individuals raised in the same conditions. Samples
for analysis of the fatty acid composition of eggs were taken on days 14, 35 and 70 of
the experiment, which lasted 10 weeks (from week 23to week 32). The fatty acid
composition of eggs was examined using a standard procedure. On all days of the
study (days 14, 35 and 70), the content of SFA was higher in eggs of the control groups
of laying hens than in experimental groups and decreased with an increase in the
amount of flaxseed oil in the feed. The content of MUFA was higher in the eggs of
experimental groups of laying hens than in the eggs of the control group on all days of
the study. The content of PUFA was found to increase with an increase in the amount
of flaxseed oil in feed rations given to experimental groups and was higher than in the
control group of laying hens. The ratio of n-6/n-3 fatty acids, as the most important
indicator of nutritional value of any food, including eggs, was significantly more
favorable on all days of the study in the eggs of experimental groups of laying hens
than in the eggs of the control group. The use of flaxseed oil in the diet of laying hens
can increase the nutritional value of eggs to such an extent that eggs produced in that
way can be declared functional food.

AB  - The aim of this study was to determine arsenic and heavy metal concentrations (lead, mercury, copper, cadmium, zinc, iron and manganese) in snail tissues (foot and digestive gland) obtained from snail farms in Serbia (near urban areas). Snail samples were analysed using atomic absorption spectrophotometry. A total of 730 individual snail samples were included in this study. Snails were packed into plastic bags and transported to the laboratory at the Faculty of Veterinary Medicine, University of Belgrade. The levels of arsenic and mercury in the examined snail tissues were below the detection limit of the analytical method. Concentrations of heavy metals were higher in digestive gland tissues than in foot tissues.
AB  - Cilj ovog ispitivanja bio je utvrđivanje koncentracije arsena i teških metala (olova, žive, bakra, kadmijuma, cinka, gvožđa i mangana) u tkivima puževa (stopalo i digestivni trakt) poreklom sa odabranih farmi u Srbiji (u blizini urbanih područja). Uzorci puževa su analizirani pomoć u atomskog apsorpcionog spektrofotometra. U ovu studiju uključeno je ukupno 730 pojedinačnih uzoraka puževa. Uzorci su upakovani u plastične kese, dopremljeni u laboratoriju Veterinarskog fakulteta, Univerziteta u Beogradu. Nivo arsena i žive u ispitivanim uzorcima puževa bio su ispod granice detekcije analitičke metode. Koncentracija teških metala bila je već a u digestivnom tkivu u poređenju sa koncentracijom teških metala u stopalu puževa.

AB  - The demands of contemporary health conscious consumers are increasingly focused on minimally processed, convenient and affordable food that retains its natural sensory qualities along with nutritional value. In order to fully respond to these expectations, the use of sous vide processing technology, which refers to cooking vacuum-sealed food in heat-stable plastic pouches under precisely monitored conditions, has been widely adopted. Due to the low temperatures of sous vide processing, most research on this processing method is associated with biological hazards such as Listeria monocytogenes, Bacillus cereus and Clostridium botulinum. Not only has sous vide long been accepted by the food industry, in recent years, it has also been applied in households and in restaurants which are searching for innovative ways to attract more health conscious consumers. In this review, the authors present basic techniques, benefits and disadvantages of sous vide cooking and consider the great efforts the modern food industry is undertaking to extend shelf-life, ensure microbiological safety and maintain nutritional and organoleptic quality of sous vide food products.

AB  - The aim of the present study was to assess effects of selenium (Se)-yeast diet supplementation on performance and carcass composition in ducks. The study was performed on 240 1-day old ducklings of the same origin (Cherry Valley hybrid), during a 49-day period, which were fed diets supplemented with the following four different levels of Se yeast (ALKOSEL (R) R397): groups with Se at 0 mg/kg of the diet as-fed, 0.2 mg/kg, 0.4 mg/kg and 0.6 mg/kg. Growth performance (bodyweight, daily weight gain, daily feed intake, feed-conversion ratio) and carcass characteristics (hot and cold carcass weight, chilling losses, dressing percentage, carcass cut yields, and percentage of tissues in breast and thighs with drumsticks) of the ducks were determined. Animals fed high-Se diets (0.4 mg/kg) had higher (P < 0.05) final bodyweight and daily weight gain (from 15 to 49 days) compared with those fed diets with inadequate (0 mg/kg) or with supranutritional (0.6 mg/kg) Se levels. Ducks fed only with basal diet showed a higher (P < 0.05) feed-conversion ratio (from 15 to 49 days) compared with those supplemented with Se at 0.4 mg/kg and 0.6 mg/kg. Dressing percentage was higher (P < 0.01) in the control group (69.50%) than in the group with Se added at 0.6 mg/kg (66.85%). The weights of basic cuts from the duck carcasses did not significantly differ among compared groups. Moreover, the percentage of skin with subcutaneous fat in breast and thighs with drumsticks increased in Se-supplemented groups compared with the control group, while the opposite was determined with the percentage of muscle. It was concluded that a diet containing 0.4 mg of added Se per kilogram produced the greatest growth-performance results in ducks.

The study was performed on 240 1-day old ducklings of the same origin (Cherry Valley hybrid), during a 49-day period, which were fed diets supplemented with the following four different levels of Se yeast (ALKOSEL (R) R397): groups with Se at 0 mg/kg of the diet as-fed, 0.2 mg/kg, 0.4 mg/kg and 0.6 mg/kg. Growth performance (bodyweight, daily weight gain, daily feed intake, feed-conversion ratio) and carcass characteristics (hot and cold carcass weight, chilling losses, dressing percentage, carcass cut yields, and percentage of tissues in breast and thighs with drumsticks) of the ducks were determined. Animals fed high-Se diets (0.4 mg/kg) had higher (P < 0.05) final bodyweight and daily weight gain (from 15 to 49 days) compared with those fed diets with inadequate (0 mg/kg) or with supranutritional (0.6 mg/kg) Se levels. Ducks fed only with basal diet showed a higher (P < 0.05) feed-conversion ratio (from 15 to 49 days) compared with those supplemented with Se at 0.4 mg/kg and 0.6 mg/kg. Dressing percentage was higher (P < 0.01) in the control group (69.50%) than in the group with Se added at 0.6 mg/kg (66.85%). The weights of basic cuts from the duck carcasses did not significantly differ among compared groups. Moreover, the percentage of skin with subcutaneous fat in breast and thighs with drumsticks increased in Se-supplemented groups compared with the control group, while the opposite was determined with the percentage of muscle. It was concluded that a diet containing 0.4 mg of added Se per kilogram produced the greatest growth-performance results in ducks.",

AB  - Meat represents food of high biological and nutritional value. Production of poultry meat in the world is continually increasing. Production of duck meat is an important segment of agricultural production in many Asian countries, compared to European countries. In Asia, about 82.6% of the total production of duck meat is produced. According to FAO (Food and Agriculture Organization) data, eight countries from Asia are in the first fifteen world producers of duck meat. In addition to meat, eggs and duck meat products are produced in these countries. Nutritional quality aspect of duck meat is associated with the fat content and composition, oxidative stability, the content of vitamins and minerals, while the sensory quality with the color, marbling, tenderness, juiciness, flavor and taste. These properties depend on several factors that mutually influence each other, among which the most important is the genotype of ducks, nutrition, housing of ducks, climatic conditions, the pre-slaughter treatment of ducks, and way of preserving duck meat. Duck meat is well accepted by consumers because of its sensory properties, high levels of phospholipid content, flavor precursors. Also it has a high content of unsaturated fatty acids that make 60% of total lipids. Because of the nutritional and sensory properties, duck meat is now often recommended in the diet of patients suffering from hypertension, neuralgia, atherosclerosis, tuberculosis and various forms of gastroenteritis.
AB  - Meso predstavlja namirnicu visoke biološke i nutritivne vrednosti. U svetu se beleži stalni porast proizvodnje mesa živine. Proizvodnja mesa pataka je važan segment poljoprivredne proizvodnje u mnogim azijskim zemljama, u odnosu na evropske zemlje. U Aziji se proizvede oko 82,6% od ukupne proizvodnje mesa pataka. Prema FAO (Food and Agriculture Organization) podacima, osam zemalja iz Azije se nalazi u prvih petnaest svetskih proizvođača mesa pataka. Pored mesa, u ovim zemljama se proizvode pačija jaja i proizvodi od mesa pataka. Nutritivni aspekt kvaliteta mesa pataka odnosi se na sadržaj masti i njihov sastav, oksidativnu stabilnost, sadržaj vitamina i minerala, dok se senzorni kvalitet odnosi na boju, mramoriranost, mekoću, sočnost, miris i ukus. Ova svojstva zavise od većeg broja faktora koji uzajamno utiču jedni na druge, a među kojima su najvažniji genotip pataka, ishrana, način držanja pataka, klimatski uslovi, postupak sa patkama pre klanja, kao i način čuvanja mesa pataka. Meso pataka je dobro prihvatljivo zbog svojih senzornih osobina, sadržaja visokog nivoa fosfolipida, prekursora aroma. Takođe, ima visok sadržaj nezasićenih masnih kiselina koje čine 60% ukupnih lipida. Zbog svojih nutritivnih i senzornih osobina, meso pataka se danas često preporučuje u ishrani pacijenata koji boluju od hipertenzije, neuralgija, ateroskleroze, tuberkuloze i različitih oblika gastroenteritisa.

The study was performed on 240 one-day old ducklings of the same origin (Cherry Valley hybrid), during a 49-day period, that were fed diets supplemented with four different levels of selenium yeast (ALKOSEL (R) R397): groups with 0 mg/kg, 0.2 mg/kg, 0.4 mg/kg and 0.6 mg/kg added Se. Live weight, carcass characteristics, meat quality characteristics, chemical composition of meat, selenium content in plasma, feces, liver and meat, as well as plasma glutathione peroxidase activity were determined. Animals fed high Se diets (0.4 mg/kg) had higher live weight (P<0.05) compared to those fed diets with inadequate (0 mg/kg) or with supranutritional (0.6 mg/kg) Se levels. Chemical analysis of meat revealed differences in moisture, protein and lipid content among compared groups. Breast meat from the group with the highest dietary Se (0.6 mg/kg) had a higher protein content (P<0.01) compared to breast meat from groups with 0 mg/kg and 0.2 mg/kg added Se. Se supplementation increased significantly Se levels in plasma, liver and muscles, as well as activity of glutathione peroxidase in plasma.
