AB  - Moniezioza je parazitska bolest malih preživara koja ima globalni karakter. Nju uzrokuju pantljičare Moniezia expansa i Moniezia benedini. U razvoju ove pantljičare, neophadni su prelazni domaćini – neparazitske grinje iz porodice
Oribatida kojima se pravi domaćini inficiraju tokom paše. Ove pantljičare nastanjuju
tanka creva domaćina, a klinička slika se najčešće ispoljava kod mladih životnja. Javljaju se profuzne dijareje, intestinalne konvulzije i opstrukcije, nadut abdomen, kaheksija i
uginuća. U Srbiji je, zavisno od regiona, prevalenca monizioze od 3 do 5%. U terapiji se
najčešće koriste preparati na bazi bezamidazola, niklozamida i kombinacije levamizola i prezikvantela

AB  - Demodicosis of sheep are parasitic infection caused by Demodex spp. Infection is not common like other type of
parasitic dermatitis and there are not many cases of this infection described. In most cases no clinical symptoms are
cusing and has little or no economic impact on sheep flocks. Demodex spend all life under host skin and present a
normal skin habitat. Mainly are resent at hair folicules where its complete transformation from eggs to adult is
performed. There are two types of diseases, local and general. Local demodicosis were present like small reddish
places without hair on skin. Main topic are skin on head, around eyes and mouth, and on the back legs. Most important
role to clinical demodicosis presents a immunological status of animals. Hereditary against demodicosis were
important role too. During our examination of parasitoses in one flock of sheep in the south of Serbia during the spring
of 2018, demodicosis was diagnosed. Established clinical signs are nonpruritic papules and nodules which develop
over the face, neck, shoulders, and sides and udder. At a later stage, there was a pustular eruption that gradually
merged, while later there was a thickening of the skin and loss of wool. Itch rarely occurred. The nodules contain a
thick, waxy, grayish material that can be easily expressed and mites can be found in this exudate. To diagnosis we
performed microscopic examination of deep skin scrape which revealed adult parasites, larval forms and lemon-shaped
eggs. Lesion were spontaneous loos around few months without therapy. In the area of the Western Balkans, only one
case of ovine demodicosis was recorded in Bosnia and Herzegovina, and this is the first case described in Serbia.

AB  - The paper examines the results of the research on the
coccidiosis in lambs in Vojvodiina. The present study was conducted in 90
sheep flocks from the all territory of Vojvodina in the period from March 2014
to January 2015. Sheep of both sexes (320 males and 580 females, for a total
of 900) were randomly chosen. There were 610 adults (one-year-old and
above) and 290 lambs. Colected faeces samples were examined using routine
coprological methods. During our examination coccidiosis were found at
32.22% (29/90) flocks. We usally occured mixed infection with 2-3 coccidia
species. At sheep most abundant species were E.ovinoidalis found at 87.1%,
followed by E faurei (42%), Eimeria ahsata (37%), E. granulosa (31%), E.
intricata (19%), and E. pallida (8%). Oocyst were found at adult ant young
animals, but clinical sign of disease were present only at young animals. The
number of excreted oocysts was higher in lambs than in adult sheep.

AB  - Enteral protozoan infection was of great importance to health status of small ruminants and
its performances. This was parasitic infection caused by protosoas from genus Eimeria,
Cryptosporidium and Giardia. Lamb and kids infection had moderate morbidity and low
mortality rate. Clinical sign of infection is usually presented in animals at 4-10 days old. The
study about parasitic fauna - protozoa helminths, and arthropods of small ruminant at south
part of Serbia, with emphasis to North Kosovo were performed during 2017. The study
included the examination in total of herds flocks of goats and sheep from Zvečan and
Leposavić district (villages Ceranja, Majdevo, Zemanica, Mure, Rudine, Žitkovac, Oraovica,
Mošnica, Donji Krnjin, Belo brdo, Mioliće, Drenova and Beliće. Colected faeces samples were
examined using routine coprological methods. Determination of parasites we performed by
morphological characteristc. Infection with protosoa occurred at and on 46.14% of examined
sheep and 29.42% of examined goat herds. Coccidiosis was found at 43 sheep and 27 goat
herds. We usally occured mixed infection with 2-3 coccidia species. At sheep most abundant
species were E faurei, followed by Eimeria ahsata, E.ovinoidalis, E. intricata and E. pallida. At
goats most abundant species were E.arlongy, folwed by infection with E. hirci, E.nina-kohlyakimovae, E. christenseni and E. caprina. Oocyst were found at adult ant young animals, but
clinical sign of disease were present only at young animals. During our examination
Cryptospoidium spp. was found at 29 sheep and 23 goat herds. Determination of subspecies
we not performed. Lambs between five and twenty-one days were the most susceptible for
infection. Lambs cryptosporidiosis has high morbidity and mortality rate. Symptoms of acute
cryptosporidiosis include inapetence, and weight loss. Infection with Giardia duodenalis was
found at 2 sheep herd. Determination of subspecies we not performed

Biodiversity, seasonal dynamics and geographical distribution of sheep and goat ticks in Serbia

AB  - The paper examines the results of the research on the tiny fauna of tiny ruminants in
the territory of the Republic of Serbia, made in the period 1989-2019. The research
covered all the regions from Vojvodina to Kosovo and included long-term tropical
biodiversity studies, full dimorphism and seasonal dynamics of occurrence. During
our study we established presence of Ixodes ricinus,I.persucatus, Rhipicephalus
sanguineus, R.bursa, R.(Boophilus) annulatus, Boophilus calcaratus, Dermacentor
marginatus, D.recticulatus, Haemophysalis punctata, Ha.inermis, Ha.sulcata,
Hyalomma savignyi,Hy. marginatum marginatum and Hy.detritium. The sex ratio of
ixodid species was in favor of females and was 61.02%: 38.98%. More males than
females (65.08%: 34.92%) were observed only in the species Rhipicephalus bursa.
For the two most commonly found species of Rhipicephalus sanguineus and Ixodes
castor, this ratio was 69.50%: 30.50% and 63.42%: 36.58%, in favor of females.

abstract = "The paper examines the results of the research on the tiny fauna of tiny ruminants in
the territory of the Republic of Serbia, made in the period 1989-2019. The research
covered all the regions from Vojvodina to Kosovo and included long-term tropical
biodiversity studies, full dimorphism and seasonal dynamics of occurrence. During
our study we established presence of Ixodes ricinus,I.persucatus, Rhipicephalus
sanguineus, R.bursa, R.(Boophilus) annulatus, Boophilus calcaratus, Dermacentor
marginatus, D.recticulatus, Haemophysalis punctata, Ha.inermis, Ha.sulcata,
Hyalomma savignyi,Hy. marginatum marginatum and Hy.detritium. The sex ratio of
ixodid species was in favor of females and was 61.02%: 38.98%. More males than
females (65.08%: 34.92%) were observed only in the species Rhipicephalus bursa.
For the two most commonly found species of Rhipicephalus sanguineus and Ixodes
castor, this ratio was 69.50%: 30.50% and 63.42%: 36.58%, in favor of females.",

AB  - Cryptosporidiosis is an anthropozoonosis caused by coccidia of the family Cryptoporididae, whish may cause
a serious health problem for kids in the first weeks of life. In our paper we presented results of examination
of goat cryptosporidiosis in Serbia. In period 2016-2019 we examined 197 goat herds. Total of 1576 faecal
smears were examined by Sheather’s sugar floatation technique and modified Ziehl–Neelsen staining technique.
Cryptosporidiosis were found at 119 herds. Kids between five and twenty-one days old are the most susceptible.
The morbidity varies from 75–100% and the mortality from 45-50%. Some animals do not develop into chronic
cases and become carriers. After infection, animals either resist the organism, develop a mild infection that is
self limiting, or soon sicken and die. Based on the performed research, we have established a significant role of
cryptosporidiosis in the development of neonatal enteropathies of kids.

AB  - The study regarding tick fauna and season distribution of ticks of small ruminant in the south part of Serbia, with emphasis on north Kosovo was performed during 2017. During the study we examined a total of 114 flocks of goats and sheep from Zvečan and Leposavić districts (villages Ceranja, Majdevo, Zemanica, Mure, Rudine, Žitkovac, Oraovica, Mošnica, Donji Krnjin, Belo brdo, Mioliće, Drenova and Beliće). Infections occurred at and on 56.14% of examined sheep and 31.42% of examined goats. The most abudant tick species were Ixodes ricinus, followed by Dermacentor marginatus, Rhipicephalus sanguineus, R.bursa, Haemaphysalis punctata and D.recticulatus.

AB  - The potential of goats to produce a high-quality meat is mainly reflected in their healthy fats, low calorie intramuscular fats, saturated fats, and, especially, their high ratios of unsaturated (UFA) and saturated (SFA) fatty acids, as well as hypocholesterolemic and hypercholesterolemic fatty acids. The aim of this study was to collect and compare meat quality parameters for domestic Balkan, Alpine and Saanen goats of the same age. Samples for all tests were taken from musculus gluteus superficialis. Chemical composition, pH value, fatty acid composition, content of volatile compounds, color and overall sensory quality (appearance, texture and smell) were determined. In chemical composition, moisture, fat, protein and ash varied significantly between each of the examined groups as opposed to pH values. Furthermore, among all the examined groups a significant difference was found for fatty acids and volatile compounds. Determined ratio of polyunsaturated fatty acids (PUFAs) to SFAs was 0.089, 0.085 and 0.071 for Balkan, Alpine and Saanen goat meats, respectively. Regarding that ratio, Saanen goat meat had the most favorable characteristics. Saanen goat meat showed the highest nutritional value. On the other hand, Balkan goat meat had the lowest intramuscular fat content. Measurements of the meat color from all three groups, as well as overall acceptability, showed significant differences between breeds. Obtained results point to the impact of breed on chemical composition and fatty acid profile of goat meat.. © 2020 American Society of Civil Engineers (ASCE).

AB  - Paramphistomatidae are the most important trematods of rumen and
reticulum in ruminants. They elapse their maturity period in rumen and
reticulum and have no changes in these organs and risk for host. But there
are larval forms of these trematods in small intestine while generate
pathologic changes there. During study about helminthes of small ruminant
at Serbia were performed in period between 2009 and 2019. After
histological determination, we concluded that occurred paramphistomided
belonging to the species Paramphistomum cervi and Paramphistomum
microbotrium P.cervi has been found in sheep and cattle in Serbia, but
during our examination P.cervi and P.microbotrium was first time occurred
at goats.

AB  - The present study was conducted in 90 sheep and goats flocks from the territory of Vojvodina in the two years period of March 2016 to October 2017, during the grazing season. Tick infestation was deteected in 53.14% of examined animals. The most dominant was Ixodes ricinus (43.91%), followed by Dermacentor marginatus (31.91%), Rhipicephalus bursa (15.22%), R.sanguineus (8.72%), Hyalomma savignyi (3.72%),, Haemaphysalis punctata (3.21%) and D.pictus (2.72%) . The sex ratio of detected tick species showed a higher number of females in four species (I.ricinus, H.punctata, R.sanguineus and D.marginatus), while higher number of males were detected in two species (R.bursa and Hy.savignyi), and an equal number of ticks of the D.pictus. The population dynamics of recorded tick species showed two annual maxima, in spring (AprilMay) and in autumn (September-October). The considerable interchange between spring and autumn tick populations can be attributed mainly to environmental conditions.
AB  - Studija je rađena tokom dvogodišnjeg perioda od marta 1996. do oktobra 2017. godine, tokom pašne sezone, na 90 stada ovaca i koza u Vojvodini. Infestacija krpeljima je ustanovljena kod 53,14% životinja. Dominantna vrsta krpelja je bila Ixodes ricinus (43,91%), slede Dermacentor marginatus (31,91%), Rhipicephalus bursa (15,22%), R.sanguineus (8,72%), Hyalomma savignyi (3,72%),, Haemaphysalis punctata (3,21%) i D.pictus (2,72%). Odnos polova je bio u korist ženki kod četiri vrste (I.ricinus, H.punctata, R.sanguineus i D.marginatus), dok su mužjaci bili brojniji kod dve vrste (R.bursa i Hy.savignyi). Jednak broj mužjaka i ženki je ustanovljen kod samo jedne vrste krpelja - D.recticulatus. Populaciona dinamika je pokazala da nađene vrste krpelja imaju dva sezonska maksimuma u proleće (april-maj) i u jesen (septembar-oktobar). Brojnost populacije tokom ovih sezonskih maksimuma je u direktnoj korelaciji sa životnim uslovima (temparatura,vlaga).

AB  - Sheep breeding represents one of the most perspective branches of the livestock production in
Serbia. The specific climate and the unic habitat include a high variability of flora and fauna
of grasslands, pastures and meadows throughout the country, ensuring high biodiversity of the
ecosystem. Autochthonous breeds are most adapted to the local environment. The present
study was performed on 143 autochthonous sheep breed flocks in Serbia during the grazing
season from March to October 2016 and 2017, and included a total of 1069 adult sheep. Tick
infection was detected in all tested flocks, affecting 49.02% of examined sheep. The most
dominant was Ixodes ricinus (44.71%), followed by Dermacentor marginatus (30.40%),
Rhipicephalus bursa (15.15%), Ripicephalus sanguineus (8.70%), Hyalomma savignyi
(3.18%), Haemaphysalis punctata (2.81%) and Dermacentor recticulatus (2.62%). In tested
years the recorded tick infections showed two peaks, in spring (April-May) and in autumn
(September-October). The considerable difference between detected spring and autumn tick
populations can be attributed mainly to climatic and environmental conditions of the
ecosystem where ticks and sheep cohabitat.

AB  - The farm animal welfare science has undergone a thorny path of development, often disputed because of its lack of measurability and the purpose of existence. At the very beginning, primarily based on moral and ethical attitudes, over time it pointed to the importance of meeting the needs of animals and the consequences of their neglect and exhaustion in the conditions of intensive livestock production. An important segment of its development was the definition and development of methodologies for the assessment of welfare indicators, which made it measurable and accepted as a scientific discipline with the knowledge applicable and useful in modern production systems. This paper is a concise review of the evolution of the animal welfare science, but also an indication of its future in the context of the development of "symbiotic" connections with the concepts of sustainable agriculture and food safety as integral parts of the modern ecological movement arose from a unified concern for the welfare of people and animals, a care for planetary welfare in general.
AB  - Nauka o dobrobiti farmskih životinja prošla je trnovit put razvoja, često osporavana zbog svoje nemerljivosti i svrsishodnosti postojanja. U samom začetku prvenstveno zasnovana na moralnim i etičkim stavovima, tokom vremena ukazala je na značaj zadovoljenja potreba životinja i posledice njihovog zanemarivanja i iscrpljivanja u uslovima intenzivne stočarske proizvodnje. Važan segment njenog razvoja bili su definisanje i razvoj metodologija za ocenu indikatora dobrobiti, čime je ona postala merljiva i prihvaćena kao naučna disciplina sa saznanjima primenljivim i korisnim u savremenim sistemima proizvodnje. Ovaj rad predstavlja sažet prikaz evolucije nauke o dobrobiti, ali i nagoveštaj njene budućnosti u smislu razvoja „simbiotičkih“ veza sa konceptima održive poljoprivrede i bezbednosti hrane kao integralnih delova savremenog ekološkog pokreta proisteklog iz objedinjene brige o dobrobiti ljudi i životinja, brige o dobrobiti planete generalno.

AB  - Goat meat consumed in all parts of the world because of its
distinctive taste and desired chemical composition. This meat is rich in protein,
vitamins and minerals; it contains very little fat, especially cholesterol and is
healthier alternative compared to other types of red meat. The quality of the meat
of goats is influenced by breed, gender, productivity and adaptability to stress,
environment, management, nutrition, body weight at slaughter and health status as
well as the slaughter and procedures with the body after slaughter. In addition,
quality also affected by parasitic, bacterial and viral etiology contaminants, which
may condition that the meat of these animals is unusable for human consumption
and therefore should take care of them. In muscle and edible internal organs of
small ruminants, we found adult and developmental forms of the parasite. In the

distinctive taste and desired chemical composition. This meat is rich in protein,
vitamins and minerals; it contains very little fat, especially cholesterol and is
healthier alternative compared to other types of red meat. The quality of the meat
of goats is influenced by breed, gender, productivity and adaptability to stress,
environment, management, nutrition, body weight at slaughter and health status as
well as the slaughter and procedures with the body after slaughter. In addition,
quality also affected by parasitic, bacterial and viral etiology contaminants, which
may condition that the meat of these animals is unusable for human consumption
and therefore should take care of them. In muscle and edible internal organs of
small ruminants, we found adult and developmental forms of the parasite. In the

AB  - Vojvodina is situated in the northern part of Serbia. The region is divided into: Bačka in the northwest, Banat in the east and Srem in the southwest. A small part of the Mačva region is also located in Vojvodina, in the Srem District. Vojvodina is abundant with numerous grasslands suitable for sheep grazing. The present study was conducted in 90 sheep flocks from the territory of Vojvodina in the period of March 2014 to January 2015, using into consideration the biodiversity and sesonal occurance and prevalence of isolated parasites. Fecal samples were examined by using qualitative and quantitative coprological methods. Infection we occurred at 81.22% of sheep. We found eggs of Nematodirus sp. (71.22%), Ostertagia sp. (69.22%), Trichostrongylus sp. (66.55%), Haemonchus sp. (64.44%), Chabertia ovina (60.11%), Dictyocaulus spp. (49.00%), Oesophagostomum sp.(36.77%), Dicrocelium dendriticum (34.66%), Marshallagia sp. (29.66%), Cooperia sp. (27.88%), Moniezia sp. (26.77%), Bunostomum sp. (22.33%) and Skrjabinema sp. (13,66%).

AB  - Paramphistomosis is a parasitic disease that in goats and rarely cause P.cervi and P.microbothrium. During the investigations conducted in the period 2012-2014 at several locations in Serbia, the prevalence ranged from 2.75-15.43%. Adult parasites were localized in the rumen and reticulum, immature in the duodenum or abomazus. Acute or intestinal pharamphistomosis occurs in young animals. It is caused by juvenile forms of the parasite. It occurs acute necrotizing hemorrhagic duodenitis, usually 2 -3 weeks after infection. The lining of the pyloric and duodenal rennet are edematous, catarrhal with bloody mucus, and a large number of parasites. Blood vessels are overfilled with blood. Diagnosis is made by stool examination and autopsy and histological examination determination by Nesmark-in.
AB  - Paramfistomoza je parazitsko obolenje koje kod koza uzrokuju P.cervi a rede i P.microbothrium. Tokom istraživanja radenih u periodu 2012-2014 na više lokaliteta u Srbiji, prevalenca je varirala od 2.75-15.43%. Odrasli paraziti su lokalizovani u rumenu i retikulumu, nezreli u duodenumu ili abomazusu. Akutna ili crevna paramfistomoza se javlja kod mladih životinja. Izazivaju je juvenilni oblici parazita. Nastaje akutni nekroticni hemoragicni duodenitis, najčešće 2 -3 nedelje po infekciji. Sluznica pilorusa sirista i duodenuma su edematozne, kataralne sa krvavom sluzi i velikim brojem parazita. AB  - Sheep production is an example of a sustainable production fully integrated within the local rural development. One of the main threats on the outdoor breeding of sheep is parasitism. Ticks are nuisances and vectors of several diseases agents. The distribution of ticks appears to be changing, with spread to previously unaffected areas. Tick and tick-borne disease control is one of the major components of animal health program protecting livestock in the developing countries, which reflects impact on the livelihood of resource-poor farming communities. Taking into consideration the negative impact on the health status of the livestock, also the direct and indirect economic losses, it is necessary to examine the tolerance and resistance of certain species against diseases. It is one of the most important elements of the strategy of selection and screening for resistant animals. The aim of this study was to determine the tick species persisting in 45 tested autochthonous Zackel sheep flocks, and examine their seasonal occurrence from March 2010 to January 2011, in the region of South Serbia. The result showed that Ixodes, Dermacentor, Ripicephalus and Haemaphysalis were the most abundant ticks found, affecting 50.40% tested sheep. The result of this study is a survey of tick species from autochthonous Zackel sheep in Serbia and implication of possible preventions measures for diseases caused and transmitted by ticks.
AB  - Ovčarstvo predstavlja primer održive proizvodnje koja čini sastavni deo ruralnog razvoja. Jedan od glavnih zdravstvenih problema kod ekstenzivnog načina uzgoja ovaca predstavljaju parazitske infekcije. Krpelji su vektori za uzročnike mnogobrojnih oboljenja. Rasprostranjenost krpelja se menja i u novije vreme ih nalazimo i na novim arealima. U zemljama u razvoju, borba protiv krpelja i oboljenja prenosica krpeljima predstavljaju jedan od glavnih strateških tačaka zdravstvenog nadzora nad životinjama i ljudima. Uzimajući u obzir značaj direktnih i indirektnih ekonomskih gubitaka izazvanih krpeljima i oboljenjima čiji su oni uzročnici, posebna pažnja treba da se posveti ispitivanju tolerancije i otpornosti ka parazitskim bolestima pojedinih vrsta i rasa životinja. Potraga za otpornim jedinkama i njihova selekcija treba da bude deo strategije stočarstva. Cilj ovog rada je bio da prikaže rezultate ispitivanja o prisustvu krpeljske faune u 45 zapata ovaca autohtone pramenke. Ispitana je sezonalna distribucija pojave pojedinih krpelja u periodu između marta 2010. i januara 2011. godine, u regionu Istočne Srbije. Kod 50, 40% ispitanih ovaca ustanovljeno je prisustvo krpelja. Rezultati pokazuju da su krpelji iz rodova Ixodes, Dermacentor, Ripicephalus i Haemaphysalis najučestaliji u zapatima ovaca autohtone pramenke.

AB  - The quality of goat meat has recently become an important aspect in the marketing of goats in Serbia. The aim of this study was to compare some goat meat quality parameters of various races and to determine the differences between them. Goat breeds were Balkan goat and Serbian white goat, both female in the age of four years. Analysis of quality parameters: chemical composition (moisture, protein, total fat, ash,), pH value, fatty acids, amino acids, microelements content, tenderness, cooking loss and colour measurements were done. Statistically significant difference was found between the samples of two groups of goat meat (P < 0.05) in relation to: live weight (kg), water (%), fat (%), protein (%) and ash (%), among 11 of 15 tested fatty acids, amino acid leucin, sensory examination of fresh meat for the palpatory evaluated firmness and in the content of copper and zinc. Statistically significant differences between the groups did not existed regarding the pH value, fatty acids eicosenoic, cis-heptadecenoic, t-elaidic, t-linolelaidic and amino acids alanine, arginine, aspartic acid, cysteine, glutamic acid, glycine, histidine, isoleucine, lysine, methionine, phenylalanine, proline, serine, threonine, tryptophan, tyrosine and valine. Also there was no statistically significant difference in instrumental testing of the meat color, sensory evaluation of surface color, visual evaluated structure, olfactory evaluated odor and iron and manganese. These results suggest that the race of animal has an impact on meat quality.
AB  - Kozije meso ima otprilike istu hranljivu vrednost kao i ovčije (bliže rečeno više belančevina, a manje masti). Zbog niske zastupljenosti zasićenih masnih kiselina i holesterola, kozije meso u ishrani ljudi je zdravija alternativa u poređenju sa drugim vrstama crvenog mesa. Bez obzira na nutritivnu vrednost, ono je ipak manje cenjeno zbog specifičnog mirisa i ukusa koji su intenzivniji kod starijih životinja. U Srbiji se malo zna o kvalitetu kozijeg mesa u poređenju sa ostalim vrstama, a posebno je nedovoljno poznavanje kvaliteta mesa autohtonih rasa koza. Cilj ovog istraživanja bio je da se prikupe i uporede podaci hemijskog sastava, pH vrednosti, sastava masnih i amino kiselina, pojedinih mikroelemenata, boje i mekoće (instrumentalno), senzorne analize svežeg mesa i određivanje kala toplotne obrade srpske bele i balkanske koze iste starosti. Iz uzoraka m. longissimus dorsi, uzetih nakon klanja navedenih životinja, ispitivan je hemijski sastav i pH vrednost, primenom ISO metoda. Sastav masnih kiselina i određen je primenom gasne hromatografije (GC6890N, Agilent Tech., USA) i poređen je sa standardom masnih kiselina (standard mix of FAMEs 37, Supelco, USA). Aminokiseline u navedenim uzorcima određene su nakon hidrolize tkiva primenom AOAC metode 982.30. Određivanje mikroelemenata u mesu koza vršeno je u metodom AOAC method 999.10. Princip metode za određivanje kala toplotne obrade sastoji se u određivanju gubitka mase usled toplotne obrade uzorka. Određivanje mekoće je obavljeno aparatom Warner–Bratzler. Boja svežeg mesa je takođe određivana u m. longissimus dorsi upotrebom Minolta chromameter CR-400. Senzornu analizu su radili obučeni ocenjivači u skladu sa ISO metodom. Dobijeni rezultati su statistički obrađeni primenom programa MS-Excel 2003, ANOVA, i utvrđene razlike srednjih vrednosti poređene t-testom na nivou značajnosti 99 i 95%. Na osnovu dobijenih rezultata može se zaključiti da je postojala statistički značajna razlika u kvalitetu mesa između ispitivanih uzoraka.

Changes in the quality of goat meat in the production of smoked ham

AB  - The quality of fresh goat meat can be defined strictly in terms of physical and chemical properties, or in terms of consumer perception. In Serbia, there is not enough information about the quality of goat meat and goat meat products, such as smoked ham. The aim of this study was to determine differences in the basic chemical composition, colour, fatty acids composition, volatile compounds in fresh meat and smoked ham (musculus gluteus superficialis). The meat was obtained from the population of Serbian White goat, five or six years old. ISO methods were implemented in order to determine the quality of these parameters. Statistically significant difference (p  lt  0.05) was determined between values of protein, fat, moisture, ash, pH value, fatty acids and volatile compounds determined in fresh meat and finished product (smoked ham). It is assumed that the complex chemical and biochemical processes occurring during production (growing, curing, smoking, drying) resulted in statistically significant differences between the quality parameters in fresh meat and smoked ham. There was a statistically significant difference (p  lt  0.05) between the values of capric acid, lauric acid, myristic acid, pentadecanoic acid, pentadecenoic acid, palmitic acid, palmitoleic acid, heptadecanoic acid, stearic acid, oleic acid, linoleic acid, linolenic acid, arachidic acid and gadoleic acid identified in the thigh meat prepared for curing and smoking in compared to value of the fatty acids identified in the final product (smoked ham).
AB  - Kvalitet svežeg mesa koza može se definisati strogo u smislu fizičkih i hemijskih osobina, ili u smislu percepcije potrošača. U Srbiji se malo zna o kvalitetu kozjeg mesa i proizvoda od kozjeg mesa, kao što je dimljena šunka. Cilj ovog istraživanja bio je da se utvrde razlike u osnovnom hemijskom sastavu, boji, sastavu masnih kiselina, volatilnih materija u svežem mesu i dimljenoj šunki (m. superficial gluteal). Meso je dobijeno klanjem koza iz populacije srpske bele koze, starih pet-šest godina. Za određivanje navedenih parametara kvaliteta korišćene su ISO metode. Između utvrđenih vrednosti proteina, masti, vode, pepela, pH vrednosti, masnih kiselina i isparljivih materija utvrđenih u svežem mesu i gotovom proizvodu (dimljena šunka) postojala je statistički značajna razlika (p  lt  0,05). U svežem mesa nisu utvrđena dva jedinjenja iz grupe aromatičnih ugljovodonika i jedinjenja iz grupe fenola. Pretpostavlja se da su složeni hemijski i biohemijski procesi tokom proizvodnje (zrenje, salamurenje, dimljenje, sušenje) doveli do statistički značajne razlike između ispitivanih parametara kvaliteta u svežem i dimljenom mesu. Utvrđena je statistički značajna razlika (p  lt  0,05) između vrednosti kaprinske kiseline, laurinske kiseline, miristinske kiseline, pentadekanske kiseline, palmitinske kiseline, palmitoleinske kiseline, heptadekanske kiseline, stearinske kiseline, oleinske kiseline, linolne kiseline, linolenske kiseline, arahidonske kiseline i gadoleinske kiseline u svežem mesu pripremljenom za sečenje i dimljenje u odnosu na vrednosti ovih masnih kiselina identifikovanih u gotovom proizvodu (šunka).

AB  - The results presented are a continuation of the research in monitoring the hygiene of facilities and hygienic principles in the production of smoked goat ham. The total number of bacteria, enterobacteria and pathogenic bacteria were examined, wet swabs were taken by non-destructive method from a total of 95 chilled goat hams before salting, after salting and after smoking. Total count of aerobic mesophilic bacteria, the number of Enterobacteriaceae and and pathogenic bacteria were determined by ISO or other standard methods. Test results show that the average total count of aerobic bacteria in the tested samples after smoking were: for 83 samples within a satisfactory range (d'' 3.5 log cfu/cm2), 10 samples in the acceptable range (3.5 to 5.0 log cfu/cm2) and 2 samples in the unacceptable range (&gt; 5.0 log cfu/cm2). Average values of the total number of Enterobacteriaceae in the samples after the smoking process were as follows: 85 samples within the satisfactory range (d'' 1.5 log cfu/cm2) and 10 samples in acceptable range (1.5 to 2.5 log cfu/cm2). Bacteria Salmonella sp, Staphylococcus sp, Proteus sp, Escherichia coli and Listeria monocytogenes were not isolated in the final product, while Bacillus sp, Streptococcus sp and Lactobacillus sp were isolated in 10.53% of the samples obtained after smoking.

AB  - Pulmonary strongylidosis of small ruminants is a parasitosis caused by multiple species of nematodes of the genus Dictyocaulus and Protostrongylus. The development of the parasite, depending on the species can be direct or going through the home - slugs. Infection occurs in the pasture where goats eat infective larvae or infected transitional hosts. , Adults and larvae of the aforementioned genera parasitic in the lungs. Apart from the direct action of a pathological lung diseases strongylide transmitted over pigs bacterial and viral etiology.
AB  - Plućna strongilidoza malih preživara je parazitoza uzrokovana sa više vrsta nematoda iz roda Dictyocaulus i Protostrongylus. Razvoj parazita, zavisno od vrsta može biti direktan ili ide preko domaćina - puževa golaća. Infekcija nastaje tokom paše kada koze pojedu infektivne larve ili zaražene prelazne domaćine. Adulti i larve svih navedenih rodova parazitiraju u plućima. Sem direktnog patološkog delovanja plućne strongilide prenose više obolenja svinja bakterijske i virusne etiologije.

Adulti i larve svih navedenih rodova parazitiraju u plućima. Sem direktnog patološkog delovanja plućne strongilide prenose više obolenja svinja bakterijske i virusne etiologije.",

AB  - Scabies is a contagious skin disease, usually chronic course, characterized by itching and skin changes. For scabies can be said to be one of the most common skin disease ectoparasites. Goat scabies were caused by Sarcoptes scabiei var. capra, Chorioptes bovis var.caprae and Psoroptes equi var. caprae. The most importance mite in goats was sarcoptes while psoroptes, and chorioptes mite less significant. This paper presents three types of mange, describing mites and its pathological actions and measures of prevention and control.
AB  - Šuga koza je kontagiozno oboljenje, većinom hroničnog toka, koje se karakteriše svrabom i kožnim promenama. Za šugu možemo reći da predstavlja jedno od najčešćih ektoparazitskih oboljenja koza. Šugu koza uzrokuju Sarcoptes scabiei var. capra, Chorioptes bovis var.caprae i Psoroptes equi var. caprae. Kod koza je najznačajnija sarkoptes šuga, dok su psoroptes i horioptes šuga manje značajne. U radu je dat prikaz sve tri vrste šuge sa opisom uzročnika i patološkim delovanjem kao i merama preventive i terapije.

Pojava i održavanje oboljenja vezani su za pašne uslove držanja životinja, koje se odvija na terenima gde postoje uslovi za razvoj prelaznih domaćina pužića iz rodova Zebrina, Hellicela i dr. i mrava iz rodova Formica and Proformica. Najraširenija je kod ovaca, koza i goveda. Dikrocelioza je zoonoza.

Resistance to controlled thermal stress and tolerance to sperm cryopreservation of two groups of boars

AB  - The aim of this study was to find out is it possible to presume success of boars sperm cryopreservation, based on controlled exposure to heat stress and to investigate in vitro quality parameters of frozen/thawed sperm of previously selected 6 boars with good results (group 1) and 6 boars (group 2) with bad results on thermo resistance test (TT). In this investigation, ejaculates of 12 chosen of 75 AI boars (Landrace, Large White, Pietrain and Durock breeds) from SVC Velika Plana (Serbia) were used. Tolerance to heat stress was performed by Schaetz (1963) method. Ejaculates were extended with Androhep plus (1:1) and kept during 60 minutes on 41oC. In cryopreservation of boars semen Westendorf et al. (1975) method, modified by Bwanga et al. (1990). Very significant changes of progressive motility rate were observed after spermatozoa exposure to controlled thermal stress. High correlation coefficient of progressive motility rate of both groups of boars, but higher in group 2 for progressive motility rate after thawing and after heat stress treatment was established. Average progressive motility rate of all 12 boars did not differ before and after thawing. Presence of boars of all breeds represented in the SVC (Large White, Landrace, Duroc and Pietrain) in both quality groups confirms the assumption that suitability for cryopreservation of sperm is individual trait. According data analysis, sperm deep freezing success requires previous selection for potential donors, which have to be consider standard quality parameters testing and controlled stress exposure tests.
AB  - Cilj rada je da se ustanovi da li moguće odrediti da li je sperma nerasta pogodna za krioprezervaciju da se na osnovu izlaganja spermatozioda kontrolisanom toplotnom stresu i da se ispitaju in vitro parametri kvaliteta odmrznutog semena dve grupe od po 6 nerastova čije je seme dobro (1. grupa) ili loše podnelo toplotni stres (2. grupa). U istraživanju su korišćeni ejakulati 12 od 75 nerastova rasa: landras, veliki jorkšir, pijetren i durok (L, J, P, D) iz SVC Velika Plana, odabranih na osnovu testa termorezistencije (TT) i svrstanih u dve kvalitetne grupe. Ispitivanje stepena termorezistencije ejakulata u razređenju Androhep-om plus 1:1 60 minuta na 41 oC, je izvedeno metodom po Schaetz-u (1963). Duboko zamrzavanje sperme odabranih nerastova izvedeno modifikovanim postupkom po Westendorf-u i sar. (1975) i Bwanga-i i sar. (1990). Rezultati TT ukazali su na vrlo značajne promene progresivne pokretljivosti spermatozoida posle izlaganja kontrolisanom toplotnom stresu. Ustanovljen je visok koeficijent korelacije kod obe grupe ali ipak nešto viši kod nerastova 2. grupe za odnos procenta progresivne pokretljivosti spermatozoida posle odmrzavanja i progresivne pokretljivosti posle izlaganja temperaturi od 41oC. Prosečna progresivna pokretljivost spermatozoida svih ispitivanih nerastova se nije značajno razlikovala pre i posle zamrzavanja. Slučajni raspored nerastova svih rasa zastupljenih u SVC (Jorkšir, Landras, Durok i Pijetren) u obe kvalitetne grupe potvrđuje pretpostavku da je pogodnost sperme za krioprezervaciju individualna osobina. Za uspešnu krioprezervaciju sperme nerastova je neophodna prethodna selekcija potencijalnih donora na osnovu rezultata ispitivanja standardnih parametara kvaliteta i testova u kojima se spermatozoidi in vitro izlažu različitim kontrolisanom stresu.
