AB - The main objective of the present research was to determine the concentrations of the selected pesticides in muscle, liver and skin of common carp. Fish were sampled in two different seasons from fish pond which received previously treated slaughterhouse wastewater. Pesticides including etridiazole, chloroneb, trifluralin, propachlor, chlorothalonil, hexa-chlorocyclopentadiene, atrazine, simazine, alachlor, metribuzin, metolachlor, DCPA, cyanazine, chlorobenzilate, endrin aldehyde, cis permethrin and trans permethrin were determined by using a GS-MS method. Many of pesticides were not determined or determined in low concentrations. Propachlor was found in muscle, skin and liver. The recommended acceptable daily intake was higher in comparison with the estimated daily intake for examined pesticides via fish reared in treated slaughterhouse wastewater. It is very important to maintain the safety of the fresh fish produced in wastewater in order to ensure food safety and avoid health problems in humans.

AB - The aim of this study was to determine the level of the organochlorine pesticides (OCPs) in meat, liver and skin of common carp. Fish were collected in spring and in autumn from fishpond that receives purified water from slaughterhouse. OCPs, including alpha-HCH, beta-HCH, delta-HCH, lindane, heptachlor, aldrin, heptachlor epoxide, trans-chlordane, cis-chlordane, endosulfan I, DDE, dieldrin, endrin, DDD, endosulfan II, dichlorodiphenyltrichloroethane (DDT), endosulfan sulphate, methoxychlor, and endrin ketone, were determined by using a gas chromatography-mass spectrometry method. OCPs were present at low concentrations and only aldrin was detected in all examined tissues. The estimated daily intake for OCPs via common carp from integrated system of production was at the lower level compared with the acceptable daily intake recommended by different organisations, showing no significant risk on consumers.

AB - Production of smoked fish is one of the most important sector in European aquaculture.
Smoked common carp (Cyprinus carpio) and smoked trout (Oncorhynchus mykiss) are present in our country and they are more present on the market in the recent years. Smoking
fish is one of the most acceptable method of fish meat processing which is relatively inexpensive, has shortime of production, and is very acceptable on our market by the consumers
due to their preference to smoked products (smoked pork). Smoked fish is significant part of
human nutrition worldwide, due to the desirable sensory properties, high nutritional value,
high content of polyunsaturated fatty acids, liposoluble vitamins, essential minerals and
essential amino acids.
Apart from optimal amounts of essential fatty acids, the ratio of essential fatty acids is
very important. The World Health Organization has recommended that the ratio of polyunsaturated and saturated fatty acids should be above 0.4, and within polyunsaturated fatty
acids, the ratio of ω6 and ω3 polyunsaturated fatty acids should be less than 4. This ratio is
adequate in the most type of fish and fishery products.
In the present study, fatty acid composition of hot smoked common carp meat packed
in vacuum and modified atmosphere (MAP) with argon was analysed. For determination
of fatty acid composition, gas chromatograph Agilent 7890A with flame ionization detector (FID) and column Supelco SP-2560 (100 m x 0,25 mm; width stationary phase 0,20
μm) was used. The ratio of polyunsaturated and saturated fatty acids was according to
recommendation of the World Health Organization and it was above 1. Within polyunsaturated fatty acids, the ratio of ω6 and ω3 polyunsaturated fatty acids also was according to
recommendation, less than 4.
The results obtained from present study confirm that hot smoked common carp meat
should be significant part of well-balanced diet.
zemlјi su zastupljeni dimlјeni šaran (Cyprinus carpio) i dimlјena pastrmka (Oncorhynchus
dimljeno svinjsko meso), veoma dobra. Dimljena riba predstavlja značajan deo ishrane ljudi
u svetu pre svega zbog poželjnih senzornih svojstava, kao i zbog visoke nutritivne vrednosti, visokog sadržaja polinezasićenih masnih kiselina, liposolubilnih vitamina, esencijalnih
minerala i esencijalnih aminokiselina. Pored optimalnih količina esencijalnih masnih kiselina, veoma je bitan i njihov odnos. Prema preporukama Svetske zdravstvene organizacije
odnos polinezasićenih i zasićenih masnih kiselina treba da bude iznad 0,4, a unutar polinezasićenih masnih kiselina, odnos ω6 i ω3 polinezasićenih masnih kiselina manji od 4. Ovaj
odnos je u mesu riba uglavnom adekvatan.
U ovom radu je analiziran masnokiselinski sastav toplo dimljenog šarana prethodno
upakovanog u vakuum i u modifikovanu atmosferu (MAP) sa argonom. Za određivanje
sastava masnih kiselina je korišćen gasni hromatograf Agilent 7890A sa plameno-jonizujućim detektorom (FID) i kolonom Supelco SP-2560 (100 m x 0,25 mm; debljina stacionarne
faze 0,20 μm).

AB - Common carp meat was smoked in traditional conditions without filter and with zeolite, granular activated carbon, and gravel filters. The aim of this study was to determine the influence of using different filters in traditional smoking conditions on 16 polycyclic aromatic hydrocarbons from the Environmental Protection Agency list (16 US-EPA PAHs). Determination and quantification of PAHs were performed by gas chromatography-mass spectrometry (GC-MS). According to the obtained results, all examined samples of common carp meat smoked in traditional conditions were safe for consumers regarding to the European Commission Regulation on PAH content. After statistical analysis, the zeolite filter appeared to be the best one based on food safety of traditional production of smoked common carp meat. Application of any of these filters to produce smoked common carp meat in traditional conditions resulted in a safer product, as lower levels of PAHs were obtained.

AB - In this study, the common carp fish were smoked in direct and indirect smoke chambers. Direct smokings in craft chamber were conducted in four ways: smoked without filter (Fo), with zeolite filter (Fz), filter with granular activated carbon (Fc) and gravel filter (Fg). The content of 16 different PAHs in smoked common carp was analyzed using GCMS method. Addition of zeolite, activated carbon and gravel filters significantly reduced PAH levels (P lt 0.05). Levels of naphthalene, acenaphthylene, fluorine, phenanthrene and fluoranthene were reduced using zeolite, activated carbon and gravel filters by 42.14, 40.64, 42.5 (Naph), 49.81, 48.96, 48.96 (Acy), 32.71, 30.79, 26.15 (Fln), 28.79, 31.68, 18.34 (Phe) and 4.14, 3.87 and 1.12 (Flt) µg/kg, respectively. The addition of zeolite and activated carbon filters reduced amount of anthracene by 15.28 and 11.89 µg/kg and amount of pyrene by 1.25 and 0.6 µg/kg, while addition of gravel filters did not influence significantly these PAHs (P > 0.05). However all filters decreased acenaphthene, benz[a]anthracene and chrysene below detection limits. Zeolite was the most effective adsorbent for PAHs. All samples were under maximum limit of BaP (2 μg/kg) and PAH4 (12 μg/kg) set by European Commission Regulation 835/2011. Based on results in the present study it can be stated that common carp smoked in both direct and indirect conditions can be considered to be safe for consumption.

abstract = "In this study, the common carp fish were smoked in direct and indirect smoke chambers. AB - The aim of this study was to determine the influence of different feed composition and cultivation on the composition of fatty acids, their relationships, and the cholesterol content in the tissue of rainbow trout (Oncorhynchus mykiss). Trout were reared in ponds at two different altitudes and raised on different feeds. The total amount of monounsaturated fatty acids in fillets of both groups showed no statistically significant difference. However, higher levels of n-6 fatty acids were found in Pond I trout fillets than in Pond II fillets, while Pond II fillets contained almost even amounts of n-3 and n-6 fatty acids. Total cholesterol content in Pond I trout fillets was significantly lower (p<0.05) than in Pond II fillets. The results indicate that the final composition of the trout fillets was mostly dependent on the feed the live fish had consumed; the altitude of the ponds had less effect. Also, both groups of trout could be used in the human diet as biologically valuable foods. Practical application: Our results show influence of altitude, feed, and fatty acid composition of feed on trout fillets. The average fatty acid level in the trout fillets increased in the order SFA <MUFA <PUFA. Trout fillets contain low levels of cholesterol but high levels of EPA, DPA, and DHA. These facts are important for fish industries and aquaculture producers to design a healthy food.

In these times, the technology is mainly used for enrichment of fish with specific taste and odour, to extend the shelf-life of these perishable products and appearance required widely on the market. A lot of chemical contaminants such as polycyclic aromatic hydrocarbons (PAHs) are formed during the combustion of fuel in the smoking process. PAHs are a group of compounds that have been the subject of great concern in the recent years due to their toxic, mutagenic and/or carcinogenic potentials to humans. These fact can have a significant impact on the acceptance of these products by consumers. AB - Niclosamide is applied for the treatment of the disease of common carp hatchlings caused by Bothriocephalus acheilognathi. One of the main characteristics of this drug is a short half-life in water. A series of experiments were performed to determine the distribution of niclosamide residues in the organs and meat of the carp, in controlled conditions. It was shown that 72.42% of niclosamide was deposited in the liver, 18.79% in the kidney and 7.79% in the spleen. However, only about 3% of deposited niclosamide was detected in meat. This drug provides rapid and effective treatment of fish, completely eliminating the tapeworms.

AB - The aim of the study was to examine the production parameters and chemical composition of fillets in tench, Tinca tinca L., farmed in one of two systems: an extensive system based on only natural food (NF) available in the fish ponds; and a semi-intensive system based on natural food plus the addition of formulated feeds supplemented with various oils: fish (FO), rapeseed (RO), soybean (SO), or linseed oil (LO). Proper pond preparation resulted in a favourable amount and structure of natural food in all ponds. The rearing system had a significant influence on the tench yield, muscle lipid contents and fatty acid composition, and the supplemented feed influenced the fatty acid composition. The percentages of eicosapentaenoic (EPA) and docosahexaenoic (DHA) acid and total highly unsaturated n-3 fatty acids (n-3 HUFA) were higher in the fish oil and the natural food groups than in the others. The n-3/n-6 ratio in the five dietary treatments was notably variable, and in any case higher in fillets than in the diets. In conclusion, the present study suggests that RO, SO and LO represent effective lipid sources for tench fed formulated diets. On the other hand, tench that fed on naturally available pond foods had a high content of n-3 HUFA in their muscle lipids, but poor growth parameters and low yields.

AB - When placing the fish and fish products on the trade it is necessary to pay attention to the presence of zoonotic parasites that can lead to infection of people especially if the fish is consumed raw or undercooked. Epidemiologically the most important are helminths from the group of Nematoda. The most important are Anisaxis spp. and Eustrongylides excisus. Anisakiasis is a serious zoonotic disease with a dramatic increase in prevalence throughout the world in the last two decades. The larvae are found in marine fish species most frequently in sardines, herring and mackerel. Eustrongylidosis is a disease that occurs primarily in freshwater fish species: catfish, zander and pike, a cause is a parasite of the genus Eustrongylides of which the most important species is Eustrongylides excisus. In this paper, the nematodes that occur in fish that are present in the market in the Republic of Serbia are present. Investigations of Anisaxis spp. were carried out at the Institute of Veterinary Medicine Novi Sad in the period of 2000-2013. Total of 2414 samples of imported marine fish was inspected. In 25 (1.29 % ) samples of herrings (Clupea harengus ) and mackerels ( Scomber scombrus ) was identified Anisakis spp. Investigations of Eustrongylides spp . were carried out in the period 2010-2013 at the Danube-Tisa-Danube Canal. Samples were collected from zander (Sander lucioperca) and European catfish (Silurisglanis) in which the presence of nematodes was found in the abdominal cavity, muscles, the lumen of the stomach and gastric wall where the parasites were encapsulated. Individuals of zander were examined during the 2013 at the Veterinary Institute Novi Sad, where the presence of larvae Eustrongylides spp. u muscle was detected. In order to avoid infecting people with parasites of fish it is necessary to carry out continuous control and monitoring. Fresh fishes and traditional fish products must be inspected for the presence of parasites before they find on the trade. Continuous education is a key factor in combating zoonotic diseases. Avoid consumption of raw or poorly cooked fish is still the best preventive procedure.

abstract = "When placing the fish and fish products on the trade it is necessary to pay attention to the presence of zoonotic parasites that can lead to infection of people especially if the fish is consumed raw or undercooked. Avoid consumption of raw or poorly cooked fish is still the best preventive procedure., Prilikom stavljanja u promet i pregleda ribljeg mesa i proizvoda od ribe treba obratiti pažnju na prisustvo zoonotskih parazita koji mogu dovesti do inficiranja ljudi naročito ako se riba konzumira sirova ili termički nedovoljno obrađena.

AB - Fish is one of the most valuable food products used in human nutrition, due to the content of proteins, fat, minerals, vitamins, essential n -3 polyunsaturated fatty acids (PUFAs) and cholesterol. To meet the growing needs of the population for this kind of food, fish are increasingly grown in aquaculture. Intensive fish production, due to increased stock density, is favoring the occurrence of bacterial diseases. As a consequence, there is increased morbidity and mortality, reduced growth and reduced leasing sockets materials, which pose a serious problem for the aquaculture and lead to massive use of chemotherapeutics. Antibiotics are the common practice for the treatment of bacterial infections in fish ponds, and flurohinolones are used as antibiotics of choice. Fluoroquinolones are a group of antibiotics that have a broad spectrum of activity, low toxicity and only a few side effects in the treated fish. However, residues of antibiotic in fish tissues represent a real risk to human health. Consumption of fish containing residues of antibiotics can cause allergic, toxic, carcinogenic, mutagenic and teratogenic effects. Therefore, it is necessary to establish the residual amounts of antibiotics in fish tissues, that can be achieved by using reliable laboratory methods and techniques. Because of this, the goal of the work was set to investigate the possibility of identification and quantification of fluoroquinolones in the kidneys of carp by microbiological diffusion method, using the test organism E. coli ATCC 11303. The investigations revealed that microbiological diffusion method enables detection of all five fluoroquinolones (oxolinic acid, enrofloxacin, sarafloxacin, difloxacin and flumequine) in kidney of carp at different maximum residue levels, MRL (100 mg/kg, 100 mg/kg, 30 mg/kg, 300 mg/kg and 600mg/kg, respectively). Identification and quantification of fluoroquinolones at MRL levels was only achieved for enrofloxacin, flumequine and difloksacin. These fluoroquinolones can be detected and quantified at the level below the MRL, i.e. at the level of 1/4 MRL. Contrary to these fluoroquinolones, sarafloxacin can be detected only at the level of 2MRL and oxolinic acid can be detected at the level of 4MRL, as well. EU regulations provide that a screening method can be applicable only if a compound can be detected in the amount of at least at the MRL, and the ½ MRL is recommended. This means that the microbiological diffusion method can be used in routine analytical practice for the identification and quantification of enrofloxacin, flumequine and difloxacin in kidney tissues of carp.

AB - Twenty-one specimens of pike-perch (Sander lucioperca) were caught in the Danube-Tisa-Danube Canal in the city area of Novi Sad for parasitological examination. The presence of nematodes in the muscles was revealed in three fish. The parasites were identified to belong to the species Eustrongylides excisus, for which the pike-perch is a paratenic host. This finding represents the first determination of the larvae in the pike-perch in Serbia. The pike-perch is infected by ingestion of benthos- or plankton-eating fishes, the second intermediate hosts harbouring the fourth-stage nematode larvae. E. excisus is pathogenic to humans, who may be infected by consuming raw or undercooked fish.

AB - Thelohanellosis is a disease that occurs in all carp categories. The cause is protozoa Thelohanellus nikolskii Achmerov, 1955. It manifests itself in two forms. The first form occurs on the fins in oneyear- old carp fry and the second one occurs on scales in two-yearold, three-year-old and older categories of common carp (Cyprinus carpio). The researches conducted between 2008 and 2012 covered 22 fish ponds, 18 of which are located in Serbia, and 4 in Bosnia and Herzegovina, Republic of Srpska. It has been concluded that both forms of the disease were present in all observed fish ponds. Prevalence of telohanellosis located on the fins ranged between 3% and 30%, and the infection intensity was between 2 and 86 cysts per individual, while in the case of thelohanellosis on scales the values were higher. Changes on the scales were present during April and May, and on the fins during July and August. After determination of morphological characteristics of spores and histopathological characteristics of plasmodia located on the fins and scales, no significant differences were noticed between them. Also, artificial infestation of carp fingerlings for species differentiation was done. Since there are no adequate therapeutic measures, control of thelohanellosis is still based on compliance with basic sanitaryprophylactic measures such as drying of equipment, freezing, mechanical cleaning and disinfection with lime.

abstract = "Thelohanellosis is a disease that occurs in all carp categories. Since there are no adequate therapeutic measures, control of thelohanellosis is still based on compliance with basic sanitaryprophylactic measures such as drying of equipment, freezing, mechanical cleaning and disinfection with lime., Telohaneloza je obolenje koje se javlja kod svih kategorija šarana. AB - Aeromonas spp. are regularly present in water, and in some cases, they cause diseases in fish and amphibians. Humans are infected by ingestion of the bacteria through contaminated food or water. Objective of this paper was to examine the presence of Aeromonas species in trout samples and to investigate the biochemical characteristics of isolated strains. In microbiological analysis of 120 trout samples, 12 bacteria strains of Aeromonas genus were isolated, of which seven (58.3%) belonged to strains of A. hydrophila group 1, and five (41.6%) to strains of A. hydrophila group 2. By biochemical characterization of isolated strains it was established that they were oxidase positive, catalase positive, arginine positive, ornitin positive, H2S negative, urease negative, tryptophan desaminase negative, gelatine negative, fermenting mannitol, inositol, rhamnose and saccharose, the are mobile, hemolytic and hydrolyze starch. In regard to other biochemical characteristics, it was established that 11 (91.7%) of 12 studied strains of A.hydrophila had β-galactosidase, they were citrate and indole positive, sorbitole negative, arabinose positive, produce NO2 and reduce it to N2. Also 10 (83.3%) of 12 studied strains were Voges-Proskauer positive and melibiosis negative, whereas eight (66.7%) of 12 studied strains had lysine-decarboxylase positive reaction and were amygdalin positive. In 58.3 % of strains (seven of 12 strains) were established to ferment glucose.

AB - Posthodiplostomatosis (black spot disease) is a disease of young freshwater fish species of families Cyprinidae and Cobitidae, resulting from infection with metacercaria, which is the penultimate developmental stage of Posthodiplostomum cuticola. Metacercaria give rise to black cysts located primarily in the skin, muscles and on the fins. The disease caused by P. cuticola in certain fish species is first detected in a fishpond in Serbia, as presented in the current work, whilst in natural waters it has been existing for many years. Diagnosis of the infection in the grass carp (Ctenopharyngodon idella) and the bighead carp (Aristichthys nobilis) was based on the occurrence of dark discolorations and cysts of the parasite on the fins. Cysts measured approximately 1 mm in diameter, were confirmed by histopathological means. Posthodiplostomatosis occurred in fishponds in which preventive measures were not implemented, i.e. where the nurseries were not dried up and mechanically cleaned.

AB - Aeromonas hydrophila spp. is commonly present in water and in certain incidences they might cause diseases in fish and amphibians. Humans are infected by ingestion of these bacteria with contaminated food or water. Aeromonas hydrophila spp. might cause gastro-intestinal disorders and poisoning in humans. One of the major issues associated with Aeromonas hydrophila and incidence of gastro-intestinal diseases is accurate identification of aeromonades at the species level. Therefore, there is a need for a clear phenotypic scheme and biochemical characterization of the mentioned species. Objective of this paper was to study the presence of Aeromas hydrophila in trout samples and to test biochemical characteristics of isolated strains. For isolation of Aeromonas hydrophila species, 120 samples of rainbow trout, commercially available, were studied. Aeromonas hydrophila was isolated from fish muscle tissue and skin according to "Microbiological Methods for the Meat Industry", second edition (1991) Biochemical studies were performed on Aeromonas hydrophila medium, followed by oxidase test (+), catalase test (+), staining according to Gram (-) and vibriostat test agar (0/129, vibriostatic), as well as biochemical tests API 20E and API 20NE. From the 120 studied rainbow trout samples, 12 strains of Aeromonas hydrophila were isolated, out of which seven strains (58.3%) of Aeromonas hydrophila belonged to group 1, whereas five strains (41,6%) belonged to Aeromonas hydrophila group 2. Out of 12 isolated strains, 11 (91.7%) had β-galactosidase. They were citrate and indol positive, sorbitol negative, arabinose positive, NO2 - producing and reducing it to N2. Then (83.3%) of 12 twelve isolated strains were Voges-Proskauer positive and melibiose negative, whereas eight (66.7%) were amigdalin and lysine-decarboxylase positive. It was established that seven of 12 twelve strains (58.3%) ferment glucose. The obtained results demonstrate the need to supplement phenotypic schemes for identification of Aeromonas hydrophila strains originating from fish at the species level.

AB - The quantitative and qualitative composition of the helminth fauna of 588 bank voles (Myodes glareolus) from the territory of Fruska Gora Mountain (Serbia) were analysed with the aim to determine if the species is a natural reservoir of any zoonotic infection. The presence of nine nematode and five cestodes species was detected. The following roundworm species were revealed: Capillaria murissylvatici (Dieseng, 1851, Nematoda: Capillariidae), Trichocephalus muris (Schrank, 1788, Nematoda: Trichuriidae), Heligmosomoides glareoli (Baylis, 1928, Nematoda: Heligmosomidae), H. polygirus (Dujardin, 1845), Heligmosomum mixtum (Schulz, 1954, Nematoda: Heligmosomidae), Aspiculuris tetraptera (Nitzsch, 1821, Nematoda: Oxyuridae), Syphacia petrusewiczi (Bernard, 1996, Nematoda: Oxyuridae), S. stroma (Linstow, 1884, Nematoda: Oxyuridae) and Rictularia proni (Seurat, 1915, Nematoda: Rictulariidae). Two species of adult tapeworms parasitized the bank vole: Catenotaenia henttoneni (Kirschenblatt, 1949, Cestoda: Catenotaeniidae) and Hymenolepis asymmetrica (Janicki, 1904, Cestoda: Hymenolepididae), and three in the larval stage: Taenia martes (Zeder, 1803, Cestoda: Taeniidae), Taenia polyacantha(Leuckart, 1856, Cestoda: Taeniidae) and Mesocestoides lineatus (Goeze, 1782, Cestoda: Mesocestoididae). The largest number of hosts was infected with Heligmosomoides glareoli and Catenotaenia henttoneni. In addition, three larval tapeworms important for veterinary science and medicine were recovered: Taenia martes, Tatratirotaeina polyacantha and Mesocestoides lineatus. For these, the bank vole is an important intermediate host. Given the fact that, up until now, the bank vole has not been researched for parasite fauna, it is a new host for all determined helminth species. The results obtained contribute to the knowledge on helminth fauna of rodents in Serbia, which was not thoroughly studied so far.

AB - The common carp (Cyprinus carpio) originating from Serbian fish ponds was examined for presence of Myxobolus encephalicus. The spores of M. encephalicus were present in blood vessels and meningeal layers. Its presence has been noted in 32-days old carp fingerlings, where in brain blood vessels predominate plasmodium parasites shape. Although, plasmodium does not effect blood vessels obturation as it is in the spore's case, clinical signs which were similar to those in trout, occurred in the 15-30 days old carps. Fingerlings growth rate and conversion ranged normally. Blood test results in fingerlings with high number of spores in brain had similar values to those in unaffected fingerlings. The morbidity percentage was higher for carps up to the one-month old cultured in the ponds serving for older carp winter storage.

AB - Presence of enrofloxacin residues in fish liver, kidney and muscle tissue was investigated after per os application of the drug. For the purpose of determination of enrofloxacin, the following analytical methods were used: microbiological method - plate pH 8 with Escherichia coli ATCC 11303 and HPLC method with fluorescence detection. After a 5-day oral treatment of carps, enrofloxacin residues in tissues were determined up to the 10th day after the end of the drug application. Enrofloxacin content determined by the HPLC method was lower than MRL; drug residues were determined in liver on the 6th day after treatment, in kidney on the 7th day and in muscle on the 9th day after treatment. The results of enrofloxacin residues determination by screening method on the medium with E. Coli ATCC 11303, pH 8 show that this procedure can be used for qualitative determination of enrofloxacin. The screening method allows determination of enrofloxacin in fish tissues below the MRL. Cyprofloxacin was not detected in fish liver, kidney and muscle tissue.
Ciprofloksacin nije utvrđen u jetri, bubrezima i mesu riba.
