AB  - The aim was to examine production performance, carcass characteristics, and intestinal histomorphology of weaned piglets (28-to 54-day-old) fed diet with 3 or 5 g of sodium butyrate per kg of diet (group II and III). Groups II and III had higher final live weight and total weight gain. The feed to gain ratio was the best in group I. The highest carcass yield was of group III. Significant differences (P<0.05) were observed in Escherischia coli counts in small intestine between control (I) and experimental groups (II and III), and in cecum between control (I) and experimental group II. There were significant differences (P<0.05) between all groups for the intestine length, intestine weight, and both height and width of the ileal villus. The highest villus height/crypt depth ratio of jejunum occurred in group II piglets, while the highest villus height/crypt depth ratio of ileum was in piglets from group III. The significant correlations were determined between amount of sodium butyrate and final live weight, intestinal length, intestinal weight, jejunal and ileal crypt depth, and ileal villus widths.

AB  - Background/Aim. Establishing a food safety control sys-tem is extremely important in preventing diseases associated with foodborne pathogens. The aim of this study was to ex-amine the hygiene status of food contact surfaces and the ap-plication of good hygiene practices by food handlers in school canteens. Methods. A total of 10,366 swabs were tak-en from food contact surfaces, including food handler's hands from public school canteens in Novi Sad, Serbia, over ten years (2008-2017), covering voluntary good hygiene prac-tices and obligatory Hazard Analysis Critical Control Points (HACCP) implementation periods. Results. Statistically sig-nificant differences (p < 0.05) in aerobic colony counts (ACCs) on surfaces between two examined periods were found. A general positive trend regarding the reduction of microbial contamination of food contact surfaces was ob-served. The percentage of surfaces swabs with ACCs above 2.48 log CFU/cm2 significantly decreased (R2 = 0.453) during the study period, and the percentage of coagulase-positive Staphylococcus in the swabs also decreased, but not significantly (R2 = 0.264), and average annual Enterobacteriaceae counts above the established limit values on surfaces significantly de-creased (R2 = 0.442) over the years. A significantly higher (p < 0.05) percentage of workers' hands harbored ACCs, coagu-lase-positive Staphylococcus, and Enterobacteriaceae above the es-tablished limits than the equipment or work surfaces. Con-clusion. The results obtained showed the proper implemen-tation of good hygiene practices concerning food contact sur-faces, but the implementation of good personal hygiene prac-tices needs enhanced supervision.
AB  - Uvod/Cilj. Uspostavljanje sistema kontrole bezbednosti je
izuzetno važno u prevenciji bolesti povezanih sa patogenima koje
se prenose hranom. Cilj ovog istraživanja bio je da se utvrdi
higijenski status kontaktnih površina i primena dobre higijenske
prakse pri rukovanju hranom u školskim kantinama. Metode.
Ukupno 10 366 briseva uzeto je sa površina koje dolaze u kontakt
s hranom i ruku osoblja zaposlenog u školskim kantinama u
Novom Sadu u desetogodišnjem periodu (2008–2017). Istraživanje
je uključivalo dva perioda: a) dobrovoljnu primenu dobre
higijenske prakse i b) obaveznu implementaciju sistema Hazard
Analysis Critical Control Points (HACCP). Rezultati. Statistički
značajna razlika (p < 0,05) utvrđena je u ukupnom broju aerobnih
bakterija (aerobic colony counts -ACCs) na površinama. Primećen je
opšti pozitivni trend u pogledu smanjenja mikrobiološke
kontaminacije površina koje dolaze u kontakt s namirnicama.
Učestalost nalaza briseva sa utvrđenim ukupnim ACCs iznad 2,48
log CFU/cm2 smanjivala se statistički značajno (R2 = 0,453) tokom
perioda ispitivanja; učestalost prisustva koagulaza pozitivnih
stafilokoka se takođe smanjivala, ali ne statistički značajno (R2 =
0,264), dok se prosečan broj enterobakterija iznad utvrđenih
graničnih vrednosti na površinama statistički značajno smanjio
tokom godina (R2 = 0,442). Na brisevima ruku ispitanog osoblja
utvrđena je statistički značajno viša (p < 0,05) učestalost prisustva
ukupnog ACCs, koagulaza pozitivnih stafilokoka i enterobakterija
iznad utvrđenih granica u odnosu na briseve uzete sa opreme ili
radnih površina. Zaključak. Dobijeni rezultati pokazuju pravilnu
primenu dobre higijenske prakse kada su u pitanju površine koje
dolaze u kontakt s hranom, dok implementacija prakse dobre lične
higijene zaposlenih zahteva pojačan nadzor

feed additives on broiler growth performance, carcass traits, intestinal
morphology and meat sensory attributes. 240 onedayold,
unsexed
Cobb500 broilers were divided into four groups: with control feed (C),
with control feed with phytobiotic containing thymol (PFA I), with
control feed with phytobiotic containing cinnamaldehyde and thymol
(PFA II) or with control feed with phytobiotic which contain cumin,
mint, clove and anise (PFA III). They were fed until 42 days of age. The
phytobiotic additives decreased feed intake, while body weight and
weight gain (P < 0.05) were higher compared with the control group of
broilers. The best weight gain had broilers fed with phytobiotic containing
thymol. The feed conversion was improved by the administration
of phytogenic feed additives (P < 0.05). Broilers fed phytogenic
additives had increased villus height in duodenum and ileum, increased
villus width in ileum and cecum, and lower cecal crypt depth
compared to the control group. Meat from the control broilers achieved
the lowest sensory acceptability scores, while meat from birds fed the
thymol plus cinnamaldehyde supplemented diet had the best odor and
flavor. This study provides additional evidence that phytogenic feed
additive consumption could have overall beneficial effects.
AB  - Das Ziel dieser Studie war es, den Einfluss von drei phytogenen Futtermittelzusätzen
auf das Wachstum von Broilern, die Schlachtkörpermerkmale,
die Darmmorphologie und die sensorischen Eigenschaften des Fleisches
zu bewerten. 240 Eintagsküken beider Geschlechter der Herkunft Cobb500-
Broiler wurden in vier Gruppen eingeteilt: mit Kontrollfutter (C), mit Kontrollfutter
mit Thymol (PFA I) enthaltendem Phytobiotikum, mit Kontrollfutter mit
Zimtaldehyd und Thymol (PFA II) enthaltendem Phytobiotikum und mit
Kontrollfutter mit Phytobiotika, die Kümmel, Minze, Nelke und Anis (PFA III)
enthalten. Die Fütterung erfolgte bis zum Alter von 42 Tagen. Die phytobiotischen
Zusatzstoffe verringerten die Futteraufnahme, während Körpergewicht
und Gewichtszunahme (P < 0.05) im Vergleich zur Kontrollgruppe
der Broiler höher waren. Die beste Gewichtszunahme hatten Broiler, die mit
Phytobiotika gefüttert wurden, die Thymol enthielten. Die Futterverwertung
wurde durch die Verabreichung von phytobiotischen Futterzusätzen
(P < 0.05) verbessert. Broiler, die mit phytogenen Zusätzen gefüttert wurden,
hatten im Zwölffingerdarm und im Ileum eine erhöhte Villus-Höhe, im
Ileum und im Blinddarm eine größere Villus-Breite und im Vergleich zur
Kontrollgruppe eine geringere Tiefe der Krypta. Das Fleisch der Kontrollgruppe
erreichte die niedrigsten sensorischen Akzeptanzwerte, während
das Fleisch der Broiler, die mit Thymol plus Zimtaldehyd-supplementierter
Diät gefüttert wurden, den besten Geruch und Geschmack hatte. Diese
Studie liefert zusätzliche Beweise dafür, dass die Aufnahme phytogener
Futterzusatzstoffe insgesamt positive Auswirkungen haben könnte.

additives had increased villus height in duodenum and ileum, increased
villus width in ileum and cecum, and lower cecal crypt depth
compared to the control group. Meat from the control broilers achieved
the lowest sensory acceptability scores, while meat from birds fed the
thymol plus cinnamaldehyde supplemented diet had the best odor and
flavor. This study provides additional evidence that phytogenic feed
additive consumption could have overall beneficial effects., Das Ziel dieser Studie war es, den Einfluss von drei phytogenen Futtermittelzusätzen
auf das Wachstum von Broilern, die Schlachtkörpermerkmale,
die Darmmorphologie und die sensorischen Eigenschaften des Fleisches
zu bewerten. 240 Eintagsküken beider Geschlechter der Herkunft Cobb500-
Broiler wurden in vier Gruppen eingeteilt: mit Kontrollfutter (C), mit Kontrollfutter
mit Thymol (PFA I) enthaltendem Phytobiotikum, mit Kontrollfutter mit
Zimtaldehyd und Thymol (PFA II) enthaltendem Phytobiotikum und mit
Kontrollfutter mit Phytobiotika, die Kümmel, Minze, Nelke und Anis (PFA III)
enthalten. Die Fütterung erfolgte bis zum Alter von 42 Tagen. Die phytobiotischen
Zusatzstoffe verringerten die Futteraufnahme, während Körpergewicht
und Gewichtszunahme (P < 0.05) im Vergleich zur Kontrollgruppe
der Broiler höher waren. Die beste Gewichtszunahme hatten Broiler, die mit
Phytobiotika gefüttert wurden, die Thymol enthielten. Die Futterverwertung
wurde durch die Verabreichung von phytobiotischen Futterzusätzen
(P < 0.05) verbessert. Broiler, die mit phytogenen Zusätzen gefüttert wurden,
hatten im Zwölffingerdarm und im Ileum eine erhöhte Villus-Höhe, im
Ileum und im Blinddarm eine größere Villus-Breite und im Vergleich zur
Kontrollgruppe eine geringere Tiefe der Krypta. Das Fleisch der Kontrollgruppe
erreichte die niedrigsten sensorischen Akzeptanzwerte, während
das Fleisch der Broiler, die mit Thymol plus Zimtaldehyd-supplementierter
Diät gefüttert wurden, den besten Geruch und Geschmack hatte. Diese
Studie liefert zusätzliche Beweise dafür, dass die Aufnahme phytogener
Futterzusatzstoffe insgesamt positive Auswirkungen haben könnte.",

AB  - Selection of optimal hybrid of Pekin duck and housing system could improve yield and quality of duck meat. The aim of this study was to investigate the effects of two rearing systems (intensive vs semi-intensive housing) on growth performance, carcass quality, and selected physical meat quality traits of two commercial strains of Pekin ducks. The study was performed on 240 one-day-old Pekin ducklings of two different strains (120 ducklings of STAR 53 medium hybrid and 120 ducklings of SM3 heavy hybrid) during a 49-day period. Half the birds (120) were reared in a complete confinement system on a floor (intensive system), while the remaining 120 ducks had access to land outside (semi-intensive system). Growth performance of ducks was determined by BW, weight gain, feed intake, and feed conversion ratio (FCR), carcass quality by dressing percentage, percentage of basic cuts in carcasses, and content of various tissues in basic cuts, while meat quality was determined by pH, drip loss, cooking loss, Warner-Bratzler shear force, and color (L*, a*, and b*) values. At the end of the study, SM3 heavy hybrid and STAR 53 hybrid Pekin ducks achieved similar BWs. Higher final BW and lower overall FCR were found in ducks reared in the intensive system than in ducks kept in the semi-intensive system. Higher dressing percentage, weight and percentage of breast, but also a lower percentage of back with pelvis in the carcasses were determined in SM3 hybrid ducks than in STAR 53 hybrid ducks. The strain of duck did not affect meat pH, drip loss, or L* color value. Moreover, housing system affected the physical meat quality of the ducks, since breasts from ducks reared in the semi-intensive system had higher initial meat pH, higher percentage of EZ-drip loss and cooking loss, and higher L*, a*, and b* values than did breasts from intensively-reared ducks. In conclusion, SM3 ducks were more suited for broiler production due to their better carcass quality than STAR 53 ducks. Furthermore, ducks reared in the intensive system had better growth performance results and better physical meat quality traits than did ducks from the semi-intensive system.

koja se dostavlja ovlašćenoj kontrolnoj organizaciji radi izdavanja potvrde, kao i o
uslovima i načinu prodaje organskih proizvoda („Sl. glasnik RS”, br. 88/16).
Zakonom o organskoj proizvodnji uređuje se proizvodnja poljoprivrednih i
drugih proizvoda metodama organske proizvodnje, ciljevi, načela i metode
organske proizvodnje, kontrola i sertifikacija, prerada, obeležavanje, skladištenje,
prevoz, promet, uvoz i izvoz organskih proizvoda i druga pitanja od značaja za
organsku proizvodnju. Odredbe Zakona odnose se na proizvode koji potiču iz svih
faza organske proizvodnje - biljne i stočarske, uključujući i akvakulturu kada se
proizvodi stavljaju u promet. Proizvodima organske proizvodnje ne smatraju se
proizvodi dobijeni lovom divljih životinja i ribolovom. Sistem kontrole organskih
proizvoda u Republici Srbiji uspostavljen je po ugledu na sistem kontrole propisan
regulativama Evropske Unije, Uredbom Saveta EU 834/2007 i Uredbom Komisije
EU 886/2008 (Council Regulation (EC) No 834/2007, Commission Regulation (EC)
No 886/2008). U januaru 2021. godine navedene uredbe prestaju da važe i na
snagu stupa nova Uredba Evropskog Parlamenta i Saveta o organskoj proizvodnji i
obeležavanju organskih proizvoda (Regulation (EU) 2018/848) sa ciljem da se
odgovori na rastuće zahteve i očekivanja potrošača.

import and export of organic products as well as other issues of importance for
organic production. The provisions of the Act are applied to products originating
from all stages of organic production - plant and livestock, including aquaculture
products for market. Organic products are not considered to be products obtained
by hunting and fishery. The system of organic products control in the Republic of
Serbia was established in accordance to the European Union regulations- Council
Regulation (EC) No 834/2007, Commission Regulation (EC) No 886/2008). On
January 2021, these regulations will expire. The new Regulation of the European
Parliament and the Council on organic production and labeling of organic products
(Regulation (EU) 2018/848) will enter into force in order to respond to growing
consumers demands and expectations.

Dijetetske mere nakon hirurškog tretmana opstipacije kod pasa

AB  - Болести гастроинтестиналног тракта су чест проблем код паса, при чему су, поред инфективних узрочника обољења, грешке у исхрани један од главних предиспонирајућих фактора. Клинички знаци обољења најчешће су повраћање, дијареја, анорексија, летаргија, губитак масе, дехидратација и опстипација. Опстипација, као један од честих гастроинтестиналних поремећаја код паса, карактерише се генерализованом дисфункцијом колона која се манифестује његовом дилатацијом и задржавањем фекалне масе. Након искључења других фактора који могу да доведу до стриктуре и/или опструкције колона и постављања тачне дијагнозе, приступа се медикаментозној терапији са модификованом специфичном исхраном и применом лаксатива, енема и прокинетика. Код пацијената који не реагују на медикаментозну терапију, препоручује се хируршка интервенција, и у том случају тренутно златни стандард је субтотална колектомија. Постоперативни период током првих 7 дана подразумева апликацију антибиотика, витамина, аналгетика и одржавање статуса хидрације и ацидобазне равнотеже надокнадом течности и електролита. Након операције препоручује се постепено, чешће давање мањих оброка како би се одржао нутритивни статус и прелазак на специјални режим исхране, који у зависности од пацијената, може да траје различито дуго, у неким случајевима и доживотно. Код поремећаја мотилитета колона препоручује се „бланд― исхрана са умереним садржајем (<10% суве материје) дијететских влакана.
AB  - Gastrointestinal tract disorders are a common problem in dogs, where, in addition to infectious causes of the disease, feeding errors are one of the main predisposing factors. Clinical signs of the disease are most commonly vomiting, diarrhea, anorexia, lethargy, weight loss, dehydration and constipation. Constipation, as one of the frequent gastrointestinal disorders, is characterized by generalized dysfunction of the column, which is manifested by its dilatation and retention of the faecal mass. After exclusion of other causes that can lead to colonic stenosis and / or obstruction and accurate diagnosis, medical treatment with modified specific nutrition and the use of laxatives, enema and prokinetics is initiated. In patients who do not respond to medication, a surgical intervention is recommended, and in this case, the current gold standard is subtotal colectomy. The post-operative period, during the first 7 days, implies the administration of antibiotics, vitamins, analgesics and maintenance of the hydration status and the acid-base balance of the fluid and electrolyte recovery. After surgery, it is recommended gradual, more frequent administration of smaller meals to maintain the nutritional status and transition to a special diet, which, depending on the patient, can last for a long time, in some cases, and for a lifetime. In the motility disorder of the column, a "bland" diet with moderate content (<10% of dry matter) of dietary fiber is recommended.

abstract = "Болести гастроинтестиналног тракта су чест проблем код паса, при чему су, поред инфективних узрочника обољења, грешке у исхрани један од главних предиспонирајућих фактора. Клинички знаци обољења најчешће су повраћање, дијареја, анорексија, летаргија, губитак масе, дехидратација и опстипација. Опстипација, као један од честих гастроинтестиналних поремећаја код паса, карактерише се генерализованом дисфункцијом колона која се манифестује његовом дилатацијом и задржавањем фекалне масе. Након искључења других фактора који могу да доведу до стриктуре и/или опструкције колона и постављања тачне дијагнозе, приступа се медикаментозној терапији са модификованом специфичном исхраном и применом лаксатива, енема и прокинетика. Код пацијената који не реагују на медикаментозну терапију, препоручује се хируршка интервенција, и у том случају тренутно златни стандард је субтотална колектомија. Постоперативни период током првих 7 дана подразумева апликацију антибиотика, витамина, аналгетика и одржавање статуса хидрације и ацидобазне равнотеже надокнадом течности и електролита. Након операције препоручује се постепено, чешће давање мањих оброка како би се одржао нутритивни статус и прелазак на специјални режим исхране, који у зависности од пацијената, може да траје различито дуго, у неким случајевима и доживотно. Код поремећаја мотилитета колона препоручује се „бланд― исхрана са умереним садржајем (<10% суве материје) дијететских влакана., Gastrointestinal tract disorders are a common problem in dogs, where, in addition to infectious causes of the disease, feeding errors are one of the main predisposing factors. Clinical signs of the disease are most commonly vomiting, diarrhea, anorexia, lethargy, weight loss, dehydration and constipation. Constipation, as one of the frequent gastrointestinal disorders, is characterized by generalized dysfunction of the column, which is manifested by its dilatation and retention of the faecal mass. After exclusion of other causes that can lead to colonic stenosis and / or obstruction and accurate diagnosis, medical treatment with modified specific nutrition and the use of laxatives, enema and prokinetics is initiated. In patients who do not respond to medication, a surgical intervention is recommended, and in this case, the current gold standard is subtotal colectomy. The post-operative period, during the first 7 days, implies the administration of antibiotics, vitamins, analgesics and maintenance of the hydration status and the acid-base balance of the fluid and electrolyte recovery. After surgery, it is recommended gradual, more frequent administration of smaller meals to maintain the nutritional status and transition to a special diet, which, depending on the patient, can last for a long time, in some cases, and for a lifetime. In the motility disorder of the column, a "bland" diet with moderate content (<10% of dry matter) of dietary fiber is recommended.",

AB  - Прекомерна тежина се појављује у случајевима акумулације повећаних количина масног ткива у телу, и сматра се најчешћим поремећајем исхране код кућних љубимаца. Гојазност је обично резултат или прекомерне исхране или неадекватног коришћења енергије, што доводи до стања позитивног енергетског биланса. До ове појаве доводе бројни фактори који могу бити предиспонирајући код појединца на гојазност укључујући генетику, пол, физичку активност и факторе везане за исхрану а пре свега за садржај енергије у оброку. Поред енергије у оквиру фактора исхране важани су и број оброка, исхрана ―са стола‖ и слични фактори. Утврђено је да homemade оброк (код куће припремљена храна за кућне љубимце) изгледа да не предиспонира гојазности. Бихевиорални фактори такође играју улогу у развоју гојазности. Могући фактори који утичу на развој гојазности укључују анксиозност, депресију, и неуспех у развијању контроле ситости. Код паса, и фактор власника је присутан и у вези са тим и трајање храњења, учесталост, гојазности власника, здравствена свест власника (и за свог љубимца и за себе)…
Гојазност може имати штетне ефекте на здравље и дуговечност паса. Проблеми код којих гојазне животиње могу бити предиспониране и појављују се са ортопедским болестима, дијабетес меллитус-ом, абнормалностима у циркулишућим профилима липида, кардиореспираторном болести, уринарним поремећајима, репродуктивним поремећајима, неоплазијама (тумори дојке, карцином прелазних ћелија), дерматолошким болестима... Главна терапеутска решења за гојазност код паса укључују корекцију исхране и повећање физичке активности. Неопходно је наставити са праћењем телесне тежине и након што је постигнута идеална тежина како би се осигурало да се изгубљена тежина не поврати. Постоји потреба да се повећа свест власника о гојазности животиња као озбиљног медицинског проблема у ветеринарској струци и да се у склопу бројних едукација то истакне.

AB  - Током 15 дана праћен је број Salmonella spp, ентеробактерија, укупног броја аеробих бактерија и бактерија млечне киселине у млевеном месу  свиња експериментално контамираног Salmonella spp (10 CFU/g) у које су додате различите концентрације (0%, 0,3%, 0,6% и 0,9%) етарског уља тимјана (EUT) чија је главна супстанца била тимол (50.48%). Узорци млевеног меса су паковани у вакуум (V) и складиштени на температури 3 ± 1 °C. Узорци су анализирани на почетку експеримента, трећег, шестог, деветог, дванаестог и петнаестог дана складиштења. У овом апстракту приказан је број бактерија млечне киселине. Истог дана након додавања, EUT смањило је број бактерија млечне киселине, а број ових бактерија кретао се од 4,20 (V+0,9% EUT) до 4,62 (V) log CFU/g. Током складиштења број бактерија млечне киселине повећао се за 2,75, 2,52, 2,32 и 2,4 log CFU/g у узорцима млевеног меса пакованог у V, V+0,3% EUT, V+0,6% EUT, V+0,9% EUT. Раст ових бактерија био је најизраженији у узорцима без додатка EUT и на крају експеримента постигао је број од 7,37 log CFU/g. Најизраженији антибактериски ефекат постигнут је додатком 0,6% и 0,9% концентрације етарског уља тимјана и број бактерија млечне киселине петнаестог дана складиштења у овим узорцима пакованим у вакуум био је 6,77 и 6,60 log CFU/g. pH вредност на почетку експеримента кретала се од 5,82 до 5,85. Пад pH вредности у узорцима био је у корелацији са порастом бактерија млечне киселине. На крају складиштења pH вредност кретала се између 5,67 и 5,83. Резултати овог огледа показују да додатак етарског уља тимјана успорава раст бактерија млечне киселине у млевеном свињском месу пакованом у вакуум. Даља истраживања треба да буду усмерена ка додавању етарских уља као потенцијалних конзерванаса природног порекла у циљу продужења одрживости производа од меса.

Uticaj inulin gel emulzije biljnih ulja na parametre boje suvih fermentisanih kobasica sa smanjenim sadržajem masti

AB  - Ферментисане суве кобасице су вредни производи од меса које се произвоdе традиционалном технологијом, са високим садржајем масти (око 40-50%) која је виdљива у нарезаном производу. Поред значајне технолошке функције, маст учествује у формирању јединственог укуса и ароме ферментисаних кобасица. Стога, велики изазов за индустрију меса је формулисање ферментисаних кобасица са смањеним садржајем масти и побољшаним маснокиселинским саставом, с обзиром да маст значајно утиче на сензорске карактеристике производа. Биљна уља, као што су кукурузно и уље уљане репице, због повољног маснокиселинског профила, имају добар потенцијал као замене за чврсто масно ткиво (ЧМТ). Параметри које су један од главних показатеља промена у изгледу ферментисаних кобасица које су резултат смањеног садржаја масти током зрења. Како би се утврдио утицај замене ЧМТ- а на параметре боје ферментисаних сувих кобасица направљене су три различите формулације: контролне кобасице (К) са 35% говеђег меса, 40% свињског меса и 25% ЧМТ-а и ферментисане кобасице истог сировинског састава са 16% ЧМТ-а замењеним инулин гел емулзијом кукурзног уља (ИК) и уља уљане репице (ИР). Након 28 дана зрења извршена су мерења боје попречног пресека у складу са CIE L*a*b* системом (L*-lightness, a*-redness, b*- yellowness). Контролне кобасице су имале више L* вредности (48,22) у поређењу са ИК и ИР кобасицама (43,51 и 44,99, P<0,05, појединачно). Пораст у заступљености црвене и жуте боје уочен је код кобасица са инулин гел емулзијама, где ИК кобасице су имале вишу а* вредност (20,20) и нижу b*.

AB  - Један од начина на који могу dа се добију подаци о потрошњи меса су и анкете, а резултати на такве анкете односе се на потрошњу меса у домаћинствима у Бањалучкој регији. Месо свиња у исхрани испитаници користе једном до два пута недељно у 38,3% случајева, месо говеда 32,2% испитаника. Месо јагњади никад не користи 43,3% испитаника. Месо живине три пута недељно користи у исхрани 43,7% испитаника. Учесници у анкети су у 3,9% случајева одговорили да не користе месо живине, 8,4 % не користи месо свиња, а 25,6% не користи месо говеда. Преко половине испитаника (55,2%) месо купује два пута недељно и више. Више од једне петине (21,6%) купује месо 1-2 пута недељно. Исто учешће испитаника (9,3% и 9,0%) месо купује мање од једном недељно, али више од једном месечно, односно мање од једном месечно. На куповину меса приближно исти број анкетираних лица (43,0% , односно 43,5%) троши недељно 10 до 20 КМ, односно више од 20 КМ, а 13,5% је оних који троше мање од 10 КМ. Из одговора на питање које се односи на „Месо је важан саставни део исхране моје породице“ више од две трећине испитаника (71,7%) је сагласно са наведеном констатацијом, 11,0% је неутрално, а 17,3% се не слаже са наведеном констатацијом. Основни разлози конзумирања меса према наводима испитаника су то што има: добар укус (71,6%), хранљиво је (70,9%), прикладно је за званичне прославе (67,9%), лако се уклапа са остатком оброка (71,7%), лако се припрема (64,2%), добар је начин да поторшач покаже своје кулинарске вештине (52%), неопходно је у исхрани деце (71,4%) и део је наше кулинарске традиције (67,5%). За понуђени одговор „Јефтино је у односу на квалитет“ најчешћи одговор је „Не слажем се“(40,1%), затим „Неутралан сам“ (31,9%) и „Слажем се“ (28,0%). Резултати указују на чињеницу да се у исхрани испитаника из ове анкете најчешће користи месо живине, а затим месо свиња. На трећем месту по потрошњи је месо говеда, док се најмање користи месо јагњади.

AB  - Izoflavoni su difenolična jedinjenja male molekulske mase koja spadaju u grupu fitoestrogena i mogu se naći u različitim biljkama, naročito iz familije Fabaceae. Jedan od glavnih izoflavona prisutnih u soji je genistin, koji nakon deglikolizacije prelazi u metabolit genistein, jedinjenje sa estrogenom aktivnošću koje ostvaruje različite antioksidativne, antiinflamatorne, imunomodulatorske, hipolipidemične i antibakterijske efekte. Osnovni cilj istraživanja u okviru ove doktorske disertacije bio je da se ispita uticaj genisteina u hrani tokom završne i produžene faze tova na proizvodne performanse, zdravstveni status, antioksidativni kapacitet, histomorfološke parametre, mikrobiotu digestivnog trakta i kvalitet i prinos mesa brojlera.Za ogled su korišćeni brojleri Cobb 500 provenijencije, prosečne inicijalne mase 44,11±4,25 g, koji su do 21. dana bili hranjeni potpunim smešama standardnog sirovinskog i hemijskog sastava za ishranu piladi u prvoj (starter) i drugoj (grover) fazi tova. Na početku treće faze tova (finišer) ukupno 360 brojlera je podeljeno u pet grupa (po 72 jedinke) sa po šest bokseva u kojima je bilo raspoređeno po 12 brojlera. Tokom završne faze tova brojleri su bili hranjeni potpunom smešom za tov piladi III na bazi kukuruza i sojine sačme, s tim da kontrolna grupa (K) nije u hranu dobijala preparat genisteina, ogledna grupa I (O-I) je dobijala 200 mg/kg, ogledna grupa II (O-II) 400 mg/kg, ogledna grupa III (O-III) 600 mg/kg i ogledna grupa IV (O-IV) 800 mg/kg hrane preparata 99,6% čistog ekstrakta genisteina. Eksperiment se sastojao iz dva dela: prvi period koji je trajao 21 dan (od 21. do 42. dana tova) i drugi period produženog tova koji je trajao 37 dana (od 21. do 58. dana tova).Pre početka svake faze tova izvršena su hemijska ispitivanja hrane, dok je za potpunu smešu za ishranu piladi III određen i antioksidativni kapacitet. Nakon oba eksperimentalna perioda (42. i 58. dan) praćeni su proizvodni rezultati (telesna masa, prirast, konzumacija, konverzija), određene su mase unutrašnjih organa, biohemijske analize krvi, aktivnost enzima antioksidativne zaštite u jetri, histomorfometrijska ispitivanja segmenata tankog creva, broj Lactobacillus spp. u cekumu, hemijski sastav tibije, parametri prinosa, kvaliteta i održivosti mesa brojlera, kao i ekonomičnost proizvodnje.Potpuna smeša za ishranu brojlera kontrolne i oglednih grupa bila je istog hemijskog sastava, izoenergetska i izoproteinska, dok u hrani oglednih grupa brojlera analitički sadržaj genisteina je bio manji od teoretski dodate količine. FRAP testom nije utvrđena razlika u antioksidativnoj aktivnosti metanolnih uzoraka hrane kontrolne i oglednih grupa brojlera (P>0,05), dok značajno manju sposobnost inhibiranja lipidne peroksidacije su pokazali uzorci hrane u kojoj je dodato 200mg/kg genisteina (P<0,05)...

AB  - The survival of Salmonella Enteritidis, S. Typhimurium, S. Infantis, and S. Montevideo in experimentally inoculated (10(6) CFU/g) minced pork meat containing different concentrations (0%, 0.3%, 0.6%, or 0.9%) of oregano (Origanum vulgare) essential oil (OEO) packaged under vacuum or MAP (30%O-2/50%CO2/20%N-2) were evaluated within 15 days of refrigeration (3 +/- 1 degrees C) storage. Carvacrol was the predominant constituent in OEO (77.16%). The minimum inhibitory concentration of OEO was similar for all Salmonella serovars (160-320 mu g/ml). Salmonella counts in minced pork were reduced by 2.09 and 3.08 log CFU/g in the samples treated with 0.3% and 0.6% OEO, respectively. Addition of 0.9% OEO reduced the Salmonella count to below the limit of detection. Experiments also included investigation of OEO effect on Enterobacteriaceae, LAB and TVC. For both packaging methods the use of OEO increased the microbial shelf life of pork. Sensory analyses showed that the samples with 0.3% OEO added were the most acceptable. Practical applications Due to its nutritional characteristics, minced meat is suitable for the growth of most microorganisms including spoilage bacteria and foodborne pathogens such as Salmonella spp. The microbial safety of minced meat is very important. Taking into account that these bacteria are one of the most important from the aspect of meat safety, their control, especially in minimally processed meat products, is crucial. OEO not only exhibited strong anti-Salmonella effects, but, in contrast to some other essential oils, is categorized as GRAS (generally recognized as safe) and can be considered as a natural preservative used in organic production as an alternative to synthetic additives. Our findings could also guide the selection of an effective concentration of OEO that is organoleptically acceptable.

AB  - L.monocytogenes, fakultativni intracelularni patogen, je široko rasprostranjena u razliĉitoj sveţoj i preraĊenoj hrani. Ovaj patogen je uzroĉnik listerioze, retkog ali ozbiljnog oboljenja ljudi i ţivotinja, izazvanog konzumacijom kontaminirane hrane. L.monocytogenes moţe da preţivi i raste u širokom rasponu razliĉitih uslova sredine u kojoj se nalazi, bilo da je ona prirodna ili sredina modifikovana aktivnošću ĉoveka. Usled sposobnosti da preţivi i raste na niskim temperaturama, u sredinama sa visokom koncentracijom soli, smanjenom pH i niskim vrednostima aktivnosti vode, ĉest je stanovnik pogona za proizvodnju hrane. Zbog svoje sveprisutnosti u ţivotnoj sredini, kontrola pojave L.monocytogenes u pogonima za proizvodnju hrane predstavlja ozbiljan izazov za sistem bezbednosti hrane. U cilju unapreĊenja sistema bezbednosti hrane, uporedo sa razvojem legislative i standarda, razvijaju se i nove metode i tehnike identifikacije mikroorganizama. Sekvenciranje kompletnog genoma (eng. Whole genome sequencing - WGS) predstavlja ultimativnu metodu za ispitivanje prisustva patogena i otkrivanje njihovog porekla u hrani.Delikates proizvodi od mesa spremni za jelo, identifikovani su kao jedan od ĉestih izvora epidemija listerioze. Prisustvo L.monocyogenes u pogonu za proizvodnju tradicionalnih proizvoda od mesa u Crnoj Gori, ispitivano je tokom perioda od 2011. do 2014. godine. Za posmatrani period izolovano je 20 izolata L.monocytogenes iz proizvoda od mesa i pogona za njihovu proizvodnju koji su podvrgnuti molekularnoj karakterizaciji, serotipizaciji uz pomoć multipleks PCR-a i sekvencera nove generacije (eng. Next generation sequencing – NGS), utvrĊivanju potencijalne antimikrobne rezistencije na osnovu NGS podataka o prisustvu secifiĉnih gena rezistencije i skriningu na prisustvo odreĊenih markera rezistencije na dezinficijense...
AB  - L. monocytogenes, facultative intracellular pathogen, can be found in different types of raw and processed foods. This pathogen causes listeriosis, a rare but severe disease in humans and animals, which is spread primarily through the consumption of contaminated food. L. monocytogenes can survive and grow in a wide spectrum of environmental conditions, weather natural or habitats created by the human activity. Due to its ability to survive low temperatures, higher sodium nitrate concentrations, low pH and water activity, L. monocytogenes can frequently be found in the food processing environment. The ubiquitous nature of L. monocytogenes poses a significant encounter to its control in the food production environment, representing a great challenge for food safety. With the aim of improvement of the efficiency of the food safety systems, in parallel to the development of legislation and standards, the new methods and techniques for identification of microorganisms have been devised. Whole genome sequencing (WGS) technique represents the ultimate method for pathogen detection and for determination of their origin in food products.Ready-To-Eat (RTE) delicatessen meat products have repeatedly been identified as a source of listeriosis outbreaks. The presence of Listeria monocytogenes was evaluated in the meat processing facility in Montenegro in the period from 2011 to 2014. AB  - The effect of dietary genistein on performance, intestinal morphology, caecal Lactobacillus spp. count, and tibia composition in broiler chickens after 21 and 37 days of feeding was investigated. A total of 360 Cobb 500 broiler chickens (21 days old) were randomly allocated to five treatments with six replicates of 12 birds each. They were fed a basal diet (C) or a basal diet supplemented with 200 (T1), 400 (T2), 600 (T3) and 800 (T4) mg genistein/kg of feed. Genistein supplementation did not affect feed intake, but improved bodyweight, weight gain and feed conversion ratio (FCR) after 21 days, while 600 mg/kg led to a significant increase in FCR after 37 days of feeding. Plasma triglyceride level decreased with dietary genistein after 21 days, while increases were found in T3 and T4 groups after prolonged supplementation. Significantly improved duodenal and jejunal villus length and width, crypt depth and villus/crypt ratio were observed after the first and the second finishing periods, respectively, while adverse effects were found in the ileum for both periods. At 42 days old, greater spleen and heart weights were measured in broilers fed diets with 800 mg/kg than in other broiler groups. The shorter genistein supplementation period (21 days) of 200 and 400 mg/kg had a positive effect on tibia wet weight, ash and calcium (Ca) content, while 37 days of the higher genistein doses administered to the T2, T3 and T4 birds significantly increased caecal lactic acid bacteria (LAB) counts. Thus, recommended doses should not exceed 400 mg/kg.

AB  - Although the nutritional value of eggs in human nutrition is well known, efforts are
still being made to increase it. That can be achieved by selecting nutrients and
supplements for laying hens feed rations. The aim of this study was to examine the
effect of different amounts of flaxseed oil in the diet of laying hens on the fatty acid
composition of eggs. To achieve that goal, experimental groups (three groups) of
laying hens were supplemented with 1.5%, 3% and 4.5% flaxseed oil (as a substitute
for corn). The control group of laying hens was fed without the addition of flaxseed oil.
Feed rations were formulated according to recommendations for the ISA Brown
hybrid. Each group comprised 40 individuals raised in the same conditions. Samples
for analysis of the fatty acid composition of eggs were taken on days 14, 35 and 70 of
the experiment, which lasted 10 weeks (from week 23to week 32). The fatty acid
composition of eggs was examined using a standard procedure. On all days of the
study (days 14, 35 and 70), the content of SFA was higher in eggs of the control groups
of laying hens than in experimental groups and decreased with an increase in the
amount of flaxseed oil in the feed. The content of MUFA was higher in the eggs of
experimental groups of laying hens than in the eggs of the control group on all days of
the study. The content of PUFA was found to increase with an increase in the amount
of flaxseed oil in feed rations given to experimental groups and was higher than in the
control group of laying hens. The ratio of n-6/n-3 fatty acids, as the most important
indicator of nutritional value of any food, including eggs, was significantly more
favorable on all days of the study in the eggs of experimental groups of laying hens
than in the eggs of the control group. The use of flaxseed oil in the diet of laying hens
can increase the nutritional value of eggs to such an extent that eggs produced in that
way can be declared functional food.

AB  - The nutritional value of foods of animal origin depends on a number of factors, but
certainly the greatest impact has the nutrition of animals. In recent times,
consumer interest are growing in the „designed products“ of animal origin, ie
food, primarily meat and eggs, which are due to the specific way of animal
nutrition enriched with microelements, vitamins, fatty acids and carotenoids.
These products have positive effects on the human body and are most often used
in preserving optimal gastrointestinal functions, raising the level of antioxidant
defenses of the body, reducing risk factors involved in the etiology of
cardiovascular diseases and cancer.
Numerous studies have shown that the use of selenium in the diet of various
animals, including poultry, contributes, among other positive effects, to an
increase in its content in the obtained products. The amount of selenium in tissues
depends on the levels and forms of selenium (inorganic, organic, nano selenium)
used in animal nutrition.
Selenium-enriched meat can influence the optimization of human nutrition by
ingesting the recommended amounts of this micronutrient, which is especially
important in selenium-deficient areas. In recent times, interests are growing in
production of eggs enriched with selenium (but also with other ingredients -
vitamin E, n-3 fatty acids m) by using different sources of these ingredients in the
laying hen meal.
The Department of Nutrition and Botany FVM, in cooperation with the
Department of Hygiene and Technology of Foods of Animal Origin, has been researching in this field and the possibility of increasing the content of selenium
(but also other ingredients) in poultry meat by organizing numerous experiments.
The concept of functional food requires multidisciplinarity in research and should
be built on a solid scientific foundation.

AB  - Purified lignocellulose represents a pronutritive substance that affects the viscosity of the intestinal content, increases the absorption of nutrients and reduces the number of pathogenic bacteria in the small intestine. In this experiment the effects of lignocellulose in poultry nutrition was studied. Trial included 384 broilers of Cobb 500 provenance, both male and female, divided into four groups (control group: C and three experimental groups: E-I, E-II and E-III), 96 animals in each. Animals were fed with standard feed mixtures, starter (from 1st to 13th day), grover (from 14th to 28th day) and finisher (from 29th to 42th day), according to the manufacturer's recommendation. A control group (C) diet was without additives. The experimental groups differed in the fact that in the first two mixtures (starter and grover) a commercial preparation of purified lignocellulose (Arbocel® R, J. Rettenmaier & Söhne GmbH + CO. KG, Rosenberg, Germany) was added in the amount of 4 g/kg of feed for the E-I group, 6 g/kg of Arbocel® R as an expense of 0.3% soybean meal and 0.3% maize was added for the E-II group and 6 g/kg of Arbocel® R as an expense of 0.6% soybean meal was added for the E-III group. Analyzing the entire period of observation (from 1st to 42th day), adding the lignocellulose in experimental E-II group resulted in the best production indicators (final body weight 2611.00 g, average daily feed intake 96.09 g, average weight gain 2569.29 g and feed to gain ratio 1.67). Based on the obtained results, it can be concluded that the use of lignocelluloses in broilers nutrition has its medical, nutritional and economical justification.

AB  - Simple Summary Prediction of technological and sensory pork quality-during a pigs life or quickly after slaughter-is increasingly required by the pork industry in order to classify carcasses or primary cuts of carcasses for different production lines. Therefore, there is increasing demand for the development of accurate, reliable, time-efficient, non-invasive, real-time tools for predicting pork and carcass quality characteristics. Based on this, the aim of this study was to assess the potential use of various physiological stress biomarkers as indicators of carcass and meat quality traits in slaughter pigs subjected to the standard marketing conditions and to minimal stressful preslaughter handling. According to the results of this investigation, lactate dehydrogenase can be considered as a useful predictor of pork quality, while cortisol, alanine amino transferase, and albumin could be useful in prediction of carcass quality. Abstract This study assessed the potential use of various physiological stress biomarkers as indicators of carcass and meat quality traits in 240 pigs subjected to the standard marketing conditions and minimal stressful antemortem handling using Pearson correlations. The most important pork quality traits (pH and temperature, water holding capacity, and color) had limited correlations with stress metabolites (lactate, glucose), stress hormones (cortisol, adrenocorticotropic hormone), stress enzymes (creatine kinase, aspartate amino transferase, alanine amino transferase), electrolytes (sodium, chloride), and acute-phase proteins (haptoglobin, C-reactive protein, albumin), indicating poor reliability in predicting pork quality. Albumin level was moderately positively correlated with live weight, hot carcass weight, cold carcass weight, and back fat thickness. Alanine amino transferase level was moderately positively correlated with live weight, hot carcass weight, and cold carcass weight. Cortisol level was moderately positively correlated with live weight, hot carcass weight, cold carcass weight, and back fat thickness, and moderately negatively correlated with the lean carcass content. Increased lactate dehydrogenase level was moderately correlated with decreased drip and cooking loss. In conclusion, lactate dehydrogenase could help pork producers predict pork quality variation, while cortisol, alanine amino transferase, and albumin could be useful in prediction of carcass quality.

AB  - This study reports, for the first time, different physico-chemical analyses, of Mediterranean mussels (Mytilus galloprovincialis) from harvesting areas in the Montenegro coast of the Adriatic Sea, in order to evaluate the influence of origin on different parameters and assessed the quality of shellfish grown in this area. The Boka Kotorska Bay is situated in Montenegro, in the southeastern part of the Adriatic Sea The mussel samples were collected at the same time in the spring of 2019 at six locations in Boka Kotorska Bay, Montenegro: Kotor and Tivat Bays. Biomet-ric parameters, percentage of meat, condition index, proximate composition, sensory evaluation and lipid profiles of mussels were studied. The concentrations of some micro and macro elements and heavy metals in mussels, were also analyzed. Significant differences were found between mussels from different locations. Mean biometric parameters of mussels grown in Sv.Nedjelja, were considerably higher than in mussels grown elsewhere.. Protein, lipid, ash and gly-cogen content were varied from 7.80 to 10.26%; 1.36 to 2.18%; 1.73 to 3.34% and 12.81 to 15.38%, respectively. Gas chromatographic analysis showed that polyunsaturated fatty acids (PUFAs) were dominant lipids in mussels (37.56 to 41.08%), followed by monounsaturated (MUFAs) (30.52 to 38.31%) and saturated (SFAs) (21.89 to 29.45%) fatty acids. Fatty acid profiles were investigated and revealed high contents of n-3 PUFAs and high n-3/n-6 ratios in all mussels from Montenegro In the mussel samples high concentrations of K, Mg, Ca, and Na, and much lower concentrations of Fe, Mn, Zn, and Cu were found. Some of toxic elements (As, Pb, Hg and Cd) were determined also.. The qualitative sensory assessment showed that all mussels were acceptable. All mussels in the current study achieved scores of 3 or more out of 5 in the qualitative category. Data on biochemical composition and quality indices of the mussels cultured in the Boka Kotorska Bay demonstrated that these products could be accepted well by consumers and could compete with other currently available mussels from other locations in Adriatic Sea.

The effects of season on health, welfare, and carcass and meat quality of slaughter pigs

AB  - This study assessed the effects of season on health, behaviour, physiological stress parameters, and carcass and meat quality in a total of 480 slaughter pigs. The following health indicators were recorded: pneumonia, pleurisy, milk spots, and pericarditis. Behaviour was monitored during unloading (slipping, falling, turning back, reluctance to move, panting, shivering) and lairaging (panting, shivering, huddling). Blood lactate and glucose concentrations were determined at exsanguination. Performance indices (live weight, daily weight gain), carcass (carcass weight, backfat and loin thickness, lean meat content, carcass lesion score), and meat quality (pH, temperature, drip, thawing and cooking losses, colour, marbling) traits were measured postmortem. Pigs slaughtered in winter had the highest live weight, carcass weight, loin thickness, and carcass lesion score, while the lowest live weight, carcass weight, and backfat thickness were recorded in pigs slaughtered in summer. The highest lactate and glucose concentrations were recorded in pigs slaughtered in summer. The highest prevalence of red, soft, and exudative meat was recorded in pigs slaughtered in winter. Pigs slaughtered in summer had the lowest pH, the highest thawing loss, L* value, b* value, and occurrence of pale, soft, and exudative meat. Pigs slaughtered in autumn had the lowest drip loss, cooking loss, L* value, b* value, and the greatest percentage of red, firm, and nonexudative meat. In conclusion, the summer and winter temperatures compromised health and welfare and reduced carcass and meat quality in slaughter pigs, indicating that protection against heat and cold stress is not yet effective.
