AB  - The aim of this study was to develop a quadrupole liquid chromatography mass spectrometry
(LC-MS/MS) method suitable for quantification of synthetic food colors, used as additives
or occurring as adulterants in the food or cosmetics industries. Ten colors were validated
in terms of limit of detection (LOD), limit of quantification (LOQ), precision, trueness and
applicability. All tested parameters of the validation were within acceptable values, and
the method was comparable to the existing high pressure liquid chromatography (HPLC
UV-PDA) method.

AB  - The aim of this investigation is to determine the content of ten elements, Cr, Mn, Co, Ni, Fe, Zn, As, Cu, Se, and Cd, in pig feed, manure and earthworms (Lumbricus terrestris). Samples were collected during 2015 and 2017, on four pig farms in Serbia, and analyzed for elements by inductively coupled plasma mass spectrometry. According to the mean concentrations, the elements show the following trends: Fe > Mn > Zn > Cr > Ni > Cu > Cd > Se > As > Co in monocalcium phosphate, Zn > Mn > Fe > Cu > Co > Cr > Ni > Se > As > Cd in vitamin-mineral premixes, Fe > Zn > Mn > Cu > Ni > Cr > Se > Co > As > Cd in complete feed, and Fe > Zn > Mn > Cu > Ni > Cr > Co > Se > Cd > As in pig manure. The obtained results show that monocalcium phosphate and vitamin-mineral premixes are the main source of Mn, Zn, and Fe in complete feed mixtures. The Cd concentration in one sample of monocalcium phosphate exceeds the maximum permissible level. Only one out of six investigated complete feed mixtures was in accordance with the national and EU regulations. The presence of Fe, Zn, and Mn in earthworms reflects their concentration in pig manure, but this is not noticed for Cr, Cu, Se, As, Ni, Co, and Cd.

Summer Season-Related Heat Stress Affects the Mineral Composition of Holstein Dams’ Colostrum, and Neonatal Calves’ Mineral Status and Hematological Profile

AB  - This study examines the effect of season-related heat stress in dams on mineral status, and hematological profile of their calves. Ten Holstein dams (LowT group) were exposed to the 49-day-long period of low air temperature (5.2 ± 0.5 °C) and ten dams (HighT group) were exposed to a 53-day-long high air temperature (27.4 ± 0.4 °C). The dams' blood samples were taken one hour after parturition, while colostrum was sampled at 2, 14, and 26 h after calving. Ca, P, Mg, Na, K, Fe, Zn, Mn, and Se concentrations were significantly lower while Cu and Co concentrations were significantly higher at least in two examined colostrum sampling points in HighT group. Calf`s blood samples were taken before 1st colostrum intake, and on days 1, 2, 3, and 7 postnatal. Ca, P, Na, K, Fe, Cu, Zn, Mn, Se, and Co were significantly lower while concentration of Mg was significantly higher in calves that originated from HighT group at least at two examined sampling points. Season affected dam's blood mineral status but the pattern was not always the same as in calves, since Na, K, Cu, and Co were significantly higher in HighT group. Calves that originated from HighT group had significantly lower hemoglobin, hematocrit, MCV, MCH, and MPV values, as well as neutrophils and monocyte counts, while platelets, eosinophils, basophils, and lymphocyte counts were significantly higher. Season-related heat stress leads to a reduction of the most minerals in both dams' colostrum and calves' blood and certain minerals' deficiencies are linked to impaired calves' hematological adaptation.

Gamma irradiation destroys dangerous contaminants in foods such as bacteria, viruses,
fungi, pesticides, and toxins. In this study, we used gamma radiation to reduce the amount
of aflatoxins in milk. The results showed a 9 % - 35.26 % reduction of aflatoxin in milk
compared to the control sample. Reductions in aflatoxin concentrations in milk are not
proportional to the applied dose of grams of radiation due to milk coagulation

AB  - Mycotoxins are common natural food contaminants which pose a risk to human and animal health. The cavitation effect is often used to break down harmful materials in a liquid medium. In this study, we used a cavitation effect to reduce the amount of aflatoxins in milk. The results showed a 24.2% reduction in aflatoxin content in milk compared to the control sample. These findings indicate that the cavitation effect could be useful for the degradation of aflatoxin M1 in milk.

In this study, we used a cavitation effect to reduce the amount of aflatoxins in milk. The results showed a 24.2% reduction in aflatoxin content in milk compared to the control sample. These findings indicate that the cavitation effect could be useful for the degradation of aflatoxin M1 in milk.",

AB  - Danas su u nauci o bezbednosti hrane definisane dve glavne opasnosti koje nastaju kao direktna posledica primene anitimikrobnih lekova: rezidue u jestivim tkivima i razvijanje rezistencije zoonotskih patogena. Enrofloksacin je antimikrobni lek iz grupe fluorohinolona. U Srbiji je registrovan za upotrebu kod živine. Cilj eksperimentalnih ispitivanja je eliminisanje rizika po zdravlje potrošača na osnovu praćenja sadržaja rezidua enrofloksacina i njegovog glavnog metabolita ciprofloksacina u tkivima lečenih brojlera. U ogledu je ispitano prisustvo rezidua u mesu i jetri pilića koji su tretirani propisanim, terapijskim dozama enrofloksacina. Sadržaj rezidua je izmeren metodom HPLC/Fl (Tečna hromatografije visoke performanse sa fluorescentnim detektorom). Tokom pet dana aplikovanja leka, i prva tri dana karence, koncentracije enrofloksacina i ciprofloksacina su bile veće od MDK vrednosti (MDK−maksimalno dozvoljene količine), propisanih u EU.
Nakon propisanog aplikovanja antimikrobnih lekova sadržaj rezidua u jestivim tkivima opada do dozvoljenih vrednosti (manje od MDK) tokom propisanog perioda karence od sedam dana. Međutim, i nakon isteka karence rezidue se zadržavaju u jestivim tkivima, u dužem vremenskom periodu. Rezidue enrofloksacina mogu da se dokažu u mesu sve do devetog dana od prekida terapije, dok se u jetri zadržavaju mnogo duže. Tek 22. dana od prekida terapije nije potvrđeno prisustvo rezidua u jetri.
AB  - The most important side effects of antimicrobial drugs usage are veterinary drug residues in edible animal tissues and development of resistance in food borne pathogens. Enrofloxacine is a fluoroquinolone licensed in Serbia for use in poultry treatment. The aim of this study was to examine the target tissue residues of enrofloxacine and its main metabolite ciprofloxacine, in order to eliminate health risks for the consumers. The presence of residues in the muscle and liver after prescribed administration of enrofloxacine to chickens was studied in our experiment. HPLC/ Fl was used for the detection of enrofloxacine and ciprofloxacine residues. During the 5 days administration period, and the first three days of the withdrawal period, enrofloxacine and ciprofloxacine concentrations in breast muscle and liver exceeded the EU MRL values (MRL-maximum residue limit). After correct application of the antimicrobial drug, tissue residue levels decreased to permitted quantities (below MRL) within the prescribed withdrawal period of seven days. However, even after the withdrawal period residues are still present in edible animal tissues. Residues of enrofloxacine can be detected in meat nine days after the end of treatment and residues in the liver are present much longer. Residues were detected in the liver up to 22 days post treatment.

Presence of ochratoxin A and toxic elements residue in tissues and their impact on safety of pork

AB  - The aim and task of this study was to determine the presence of ochratoxin A (OTA) in blood serum, liver and kidneys of fattening swine, slaughtered regularly, originating from different areas of Serbia. During meat inspection on the slaughterhouse line samples of blood, kidney and liver per animal were randomly sampled (n=90) and analyzed by HPLC for ochratoxin A. Also, the presence of nephrotoxic (cadmium, lead, mercury and arsenic) elements in kidneys was carried out. Of the 90 liver samples, 26.6% contained OTA in the range of 0.22-14.5 ng/g, while the incidence of OTA in serum and kidney samples were very similar (31 and 33.3%, respectively). The analyses showed that serum samples were positive in the range of 0.22-221 ng/mL, while ochratoxin A concentrations in the kidney were between 0.17 and 52.5 ng/g. The mean distribution of OTA residue followed the pattern: serum>kidneys>liver (100>34>17), while in respect to occurrence it followed the pattern: kidneys>serum>liver (100>93.4>79.9). The results of this study showed that 2.2% of kidney sample had a content of ochratoxin A above the maximum permitted limit in Serbia of 10 ng/g. The results from this survey indicated that there was a low correlation between the OTA level in serum and liver as well as in the OTA level in kidney and liver (r=0.319 and 0.341, respectively) while the strongest correlation was found between the OTA level in serum and in kidney (r=0.973). The presence of mercury was found in 33.3% of kidney samples in the range of 0.005-0.055 mg/kg, while the presence of cadmium was found to a lesser degree (27.7%). The Hg concentrations in the kidney samples were lower than 0.10 mg/kg and did not exceed the guideline level established in Serbia, while concentration of cadmium in only one kidney sample was greater than 1.0 mg/kg, and exceeded the limit proposed by the Serbian Rule Book. The presence of arsenic was found only in one sample, while the presence of lead was not established. This study shows the presence of OTA in Serbian slaughtered pigs at levels comparable to those reported in other countries.
AB  - Cilj ovog rada je bio da se utvrdi prisustvo rezidua ohratoksina A (OTA) i toksičnih elemenata (kadmijum, olovo, živa i arsen) u tkivima zaklanih, tovnih svinja, poreklom iz različitih regiona Srbije. Tokom veterinarsko-sanitarnog pregleda zaklanih svinja, na liniji klanja, metodom slučajnog uzorkovanja uzimani su uzorci krvi, a zatim pripadajuća jetra i bubrezi, odgovarajuće životinje (n=90). Prisustvo rezidua OTA utvrđeno je u 26,6% uzoraka jetre u količini od 0,22 do 14,5 ng/g, dok je zastupljenost rezidua OTA u uzorcima krvne plazme i bubrega bila skoro identična (31,1 i 33,3%, ponaosob). Sadržaj OTA u uzorcima krvne plazme kretao se od 0,22 do 220,8 ng/mL, dok se u uzorcima bubrega kretao od 0,17 do 52,5 ng/g. Distribucija OTA u ispitanim tkivima (u %) u odnosu na sadržaj kretala se sledećim redosledom: krvna plazma> bubrezi>jetra (100>34>17), dok se u odnosu na zastupljenost rezidua kretala sledećim redosledom bubrezi>krvna plazma>jetra (100> 93,4>79,9). Rezultati naših istraživanja ukazuju na to da je u 2,2% ispitanih uzoraka bubrega utvrđen sadržaj OTA iznad maksimalno dozvoljene granice (10 ng/g). Nizak stepen pozitivne korelacije utvrđen je između sadržaja OTA u krvnoj plazmi i jetri (r=0,319), kao i između sadržaja OTA u jetri i bubrezima (r=0,341). Vrlo visok stepen pozitivne korelacije utvrđen je između sadržaja OTA u krvnoj plazmi i bubrezima (r=0,973). Prisustvo rezidua žive utvrđeno je u 33,3% uzoraka bubrega, u odnosu na učestalost nalaza rezidua kadmijuma koja je bila nešto manja (27,7%). Sadržaj žive kretao se u granicama predviđenim pravilnikom (0,005-0,055 mg/kg), dok je sadržaj kadmijuma u jednom uzorku bio iznad maksimalno dozvoljene granice (1,23 mg/kg). Prisustvo arsena utvrđeno je samo u jednom uzorku, dok prisustvo olova nije utvrđeno.

The presence of mercury was found in 33.3% of kidney samples in the range of 0.005-0.055 mg/kg, while the presence of cadmium was found to a lesser degree (27.7%). The Hg concentrations in the kidney samples were lower than 0.10 mg/kg and did not exceed the guideline level established in Serbia, while concentration of cadmium in only one kidney sample was greater than 1.0 mg/kg, and exceeded the limit proposed by the Serbian Rule Book. The presence of arsenic was found only in one sample, while the presence of lead was not established. This study shows the presence of OTA in Serbian slaughtered pigs at levels comparable to those reported in other countries., Cilj ovog rada je bio da se utvrdi prisustvo rezidua ohratoksina A (OTA) i toksičnih elemenata (kadmijum, olovo, živa i arsen) u tkivima zaklanih, tovnih svinja, poreklom iz različitih regiona Srbije. Tokom veterinarsko-sanitarnog pregleda zaklanih svinja, na liniji klanja, metodom slučajnog uzorkovanja uzimani su uzorci krvi, a zatim pripadajuća jetra i bubrezi, odgovarajuće životinje (n=90). Prisustvo rezidua OTA utvrđeno je u 26,6% uzoraka jetre u količini od 0,22 do 14,5 ng/g, dok je zastupljenost rezidua OTA u uzorcima krvne plazme i bubrega bila skoro identična (31,1 i 33,3%, ponaosob). Sadržaj OTA u uzorcima krvne plazme kretao se od 0,22 do 220,8 ng/mL, dok se u uzorcima bubrega kretao od 0,17 do 52,5 ng/g. Distribucija OTA u ispitanim tkivima (u %) u odnosu na sadržaj kretala se sledećim redosledom: krvna plazma> bubrezi>jetra (100>34>17), dok se u odnosu na zastupljenost rezidua kretala sledećim redosledom bubrezi>krvna plazma>jetra (100> 93,4>79,9). Rezultati naših istraživanja ukazuju na to da je u 2,2% ispitanih uzoraka bubrega utvrđen sadržaj OTA iznad maksimalno dozvoljene granice (10 ng/g). Nizak stepen pozitivne korelacije utvrđen je između sadržaja OTA u krvnoj plazmi i jetri (r=0,319), kao i između sadržaja OTA u jetri i bubrezima (r=0,341). Vrlo visok stepen pozitivne korelacije utvrđen je između sadržaja OTA u krvnoj plazmi i bubrezima (r=0,973). Prisustvo rezidua žive utvrđeno je u 33,3% uzoraka bubrega, u odnosu na učestalost nalaza rezidua kadmijuma koja je bila nešto manja (27,7%). Sadržaj žive kretao se u granicama predviđenim pravilnikom (0,005-0,055 mg/kg), dok je sadržaj kadmijuma u jednom uzorku bio iznad maksimalno dozvoljene granice (1,23 mg/kg). Prisustvo arsena utvrđeno je samo u jednom uzorku, dok prisustvo olova nije utvrđeno.",
