AB  - Peripartal period in dairy cows includes 3 weeks ante partum and 3
weeks post partum (transition period). The transition period represents the
most challenging phase in the life of dairy cows, because the body occurring
metabolic, endocrine, immune and reproductive changes that affect the
animal health and production efficiency. During the transition period (the
late gestation and early lactation) in response to metabolic stress, in dairy
cows can develop numerous pathophysiological mechanisms (inflammation,
insulin resistance and metabolic adaptation). Numerous mechanisms are
activated in the organism of dairy cows, the main role of which is
maintenance of homeostatic and homeostatic functions of all tissues, organs
and organ systems. In regulation of these processes, heat stress proteins
HSP70 play a key role.

AB  - The quality of slaughtered animals is a subject of interest, for both primary production and the meat industry. Classification of the carcasses is performed in slaughterhouses immediately after a veterinary examination and measurement of the carcasses weight. The present study examined the quality of young cattle carcasses in a slaughterhouse in the Raska district, according to the standard applied in the EU but not in Serbia. In total, 100 cattle carcasses (young bulls) were examined. For meat quality evaluation and grading, the following parameters according to the European standard for the classification of cattle carcasses SEUROP were used: slaughter weight, carcass weight and carcass yield, I.e. the carcass conformation, development of the muscles of the carcass as well as the development of basic parts (round, back and shoulder) and the degree of carcass fat tissue coverage.

Estimation of insulin resistance in healthy and ketotic cows during an intravenous glucose tolerance test

AB  - The objective of this study was to determine insulin resistance in healthy (n=8) and ketotic (n=7) dairy cows based on the difference between basal and dynamic changes in glucose, insulin, non-esterified fatty acids (NEFA), ß-hydroxybutyrate (BHB) concentrations, and on the determination of their mutual relationship and relationship with insulin resistance indices (RQUICKI and RQUICKI-BHB), after intravenous glucose tolerance test (IVGTT). The RQUICKI index showed a significant linear correlation (P  lt  0.05) with basal insulin, glucose, NEFA and BHB levels. However, RQUICKI-BHB index values exhibited a negative correlation (P  lt  0.01) with basal NEFA and BHB values and their clearance rates, as well as with glucose clearance rate, and a positive correlation (P  lt  0.05) with basal insulin values as well as with insulin and glucose responses during IVGTT. The correlation between basal values of these parameters and the values measured or calculated during IVGTT is the result of RQUICKI-BHB values, as the exclusion of RQUICKI-BHB leads to loss of the statistical significance of the correlations between basal and dynamic values. Insulin resistance in ketotic cows is characterized by decreased insulin response to glucose and increased insulin resistance of the tissue, their correlation being the result of the RQUICKI-BHB index value.

Effect of age of young Simmental bulls on dressing percentage

AB  - Considering the Serbia's potential and tradition in production of quality beef meat as food for human consumption and raw material in the food industry and the demand of the EU market, shows the need to intensify the production of this foodstuff. Aim of this paper was to analyze the effect of age of young Simmental bulls on dressing percentage in slaughterhouse, according to the standard applied in the EU (Council Regulation (EC) No 1234/2007, Commission Regulation (EC) No 1249/2008; Commission European, Directorate-General for Agriculture and Rural Development). Regulations that define more precisely the quality of meat are only partially implemented in Serbia (Official Gazette of the SFRY 34/74, 26/75, 13/78). The accuracy of the slaughter processing of carcasses is assessed as adequate in the facility in which the analysis was conducted. The study was conducted on 116 young bulls carcasses, from redemption. Two groups of young bulls (cattle) were formed, first group the age of 269-350 days and second group the age of 351-450 days. The results show that due to the wider age intervals in the second group (351-450 days) the difference in mass of animals before slaughter and carcass weight after primary processing is statistically significant (P  lt 0.05), while the yield difference between the two groups is statistically insignificant (P> 0.05). The obtained results indicate that it is necessary to undertake concrete measures in the primary sector to achieve better yield and meat quality.
AB  - Posmatrajući potencijal i tradiciju naše zemlje u proizvodnji kvalitetnog goveđeg mesa kao namirnice za ishranu ljudi i sirovine za preradu u prehrambenoj industriji s jedne strane, i potreba tržista EU sa druge strane, neophodno je intenzivirati proizvodnju ove vrste namirnice animalnog porekla. Cilj rada je bio da se analizira uticaj starosti junadi (mladih bikova) simentalske rase na randman, u klanici, prema standardu koji se primenjuje u zemljama Evropske Unije (Council Regulation (EC) No 1234/2007, Commission Regulation (EC) No 1249/2008; Commission European, Directorate-General for Agriculture and Rural Development). U Republici Srbiji se samo delimično primenjuju propisi koji bliže definišu kvalitet mesa (Pravilnik Sl. list SFRJ 34/74, 26/75, 13/78). Ispravnost klanične obrade trupa je ocenjena kao adekvatna u objektu u kome je sprovedena analiza. Ispitivanje je sprovedeno na 116 trupova junadi (mladih bikova) iz otkupa. Formirane su dve grupe junadi (mladih bikova), prva starosti 269-350 dana i druga 351-450 dana. Rezultati pokazuju da su usled širih starosnih intervala u drugoj grupi (351-450 dana) razlike u masi životinja pre klanja i masi trupova nakon primarne obrade statistički značajne (P lt 0.05), dok su razlike između randmana dve posmatrane grupe statistički nesignifikantne (P>0.05). Dobijeni rezultati ukazuju da je neophodno preduzeti konkretne mere u primarnom sektoru radi postizanja boljeg prinosa i kvaliteta mesa.

AB  - Domestic spotted cattle of Simmental breed with a combined production capacity is mostly grown in the Republic of Serbia. Considering the Serbia's potential and tradition in production of quality beef meat as food for human consumption and raw material in the food industry and the demand of the EU market, imposes the need for changing the present and adopting new regulations. The quality of the slaughtered animals is a subject of interest, of both primary production and meat industry. Procedure of classification of carcasses is performed in slaughterhouses immediately after a veterinary examination and measurement of carcasses weight. This paper examines the quality of young cattle carcasses in a slaughterhouse in the Raska district, according to the standard applied in the EU but not in Republic of Serbia. Examination has been conducted on 80 cattle carcasses (young bulls) weighing 450 - 550 kg. For the quality evaluation and grading of meat the following parameters according to the European standard for the classification of cattle carcasses (SEUROP) were used: weight of the animal, the category of a slaughtered animal according to the age and physiological state, slaughter weight / carcass weight and randman, i.e. the conformation of the carcass, development of the muscles of the carcass as well as the development of basic parts (leg, back and shoulder) and the degree of carcass fat tissue coverage.
AB  - Domaće šareno goveče u tipu simentalca je rasa goveda kombinovanih proizvodnih sposobnosti koja se najviše gaji u Republici Srbiji. Posmatrajući potencijal i tradiciju naše zemlje u proizvodnji kvalitetnog goveđeg mesa kao namirnice za ishranu ljudi i sirovine za preradu u prehrambenoj industriji s jedne strane, i potreba tržista EU sa druge strane, nameće se potreba za menjanjem postojećih i donošenjem novih propisa. Kvalitet trupova zaklanih životinja je predmet interesovanja, kako primarne proizvodnje, tako i industrije mesa. Postupak klasiranja trupova odnosno polutki sprovodi se u klanicama neposredno nakon veterinarskog pregleda i utvrđivanja mase trupa. U radu je ispitan kvalitet trupova junadi, zaklanih u jednoj klanici u Raškom okrugu, prema standardu koji se primenjuje u zemljama Evropske Unije a koji se još ne primenjuje u Republici Srbiji. Ispitivanje je sprovedeno na 80 trupova junadi (mladih bikova) telesne mase 450 - 550 kg. Za procenu kvaliteta i klasiranje mesa u trupovima korišćeni su parametri, prema Evropskom standardu za klasiranje trupova goveda SEUROP: masa životinje, kategorija zaklane životinje shodno starosti i fiziološkom stanju, klanična težina/masa trupa i randman, konformacija trupa tj. razvijenosti mišića trupa kao i razvijenosti osnovnih delova (but, leđa i plećka) i stepen prekrivenosti trupa masnim tkivom.

Examination has been conducted on 80 cattle carcasses (young bulls) weighing 450 - 550 kg. For the quality evaluation and grading of meat the following parameters according to the European standard for the classification of cattle carcasses (SEUROP) were used: weight of the animal, the category of a slaughtered animal according to the age and physiological state, slaughter weight / carcass weight and randman, i.e. the conformation of the carcass, development of the muscles of the carcass as well as the development of basic parts (leg, back and shoulder) and the degree of carcass fat tissue coverage., Domaće šareno goveče u tipu simentalca je rasa goveda kombinovanih proizvodnih sposobnosti koja se najviše gaji u Republici Srbiji. AB  - This study examined the activities of aspartate-aminotransferase (AST), gamma-glutamyl-transferase (GGT) and lactate-dehydrogenase (LDH) in the blood serum of 45 dairy Simmental cows divided into three groups according to production period. The first group (n=15) consisted of late pregnant dairy cows, the second group (n=15) cows in the early lactation, and the third group (n=15) cow in mid lactation. The significant higher activity (P lt 0.05) of AST, GGT and LDH were determined in the early lactation period than in dry period and during full lactation. Research results showed possibility of mild degree of hepatic lesions, probably due to fat infiltration in early lactation cows. Serum AST enzyme activities were significant correlated (P lt 0.05) with GGT and LDH activities and may be most sensitive indicator.
AB  - U ovom radu je određivana aktivnost aspartat-aminotransferaze (AST), gama-glutamat-transferaze (GGT) i laktat dehidrogenaze (LDH) u krvnom serumu kod 45 simentalskih mlečnih krava, podeljenih u tri grupe u zavisnosti od produktivnog perioda. Prvu grupu (n=15) su činile visoko gravidne krave, drugu grupu (n=15) krave u ranoj laktaciji, a treću grupu (n=15) krave tokom pune laktacije. Statistički značajno veće aktivnosti AST (P lt 0.05),GGT (P lt 0.05) i LDH (P lt 0.05) u krvnom serumu su utvrđene kod krava u ranoj laktaciji u odnosu na aktivnosti ovih enzima u serumu kod zasušenih krava i krava u punoj laktaciji. Dobijeni rezultati ukazuju na mogućnost blagog stepena oštećenja ćelija jetre, odnosno masnu infiltraciju hepatocita kod krava na početku laktacije. Serumske aktivnosti AST su bile u značajnoj korelaciji (P lt 0.05) sa aktivnostima GGT i LDH u krvnom serumu pa se AST može smatrati pouzdanim indikatorom u tvrđivanju funkcionalnog stanja jetre kod mlečnih krava tokom peripartalnog perioda i pune laktacije.

AB  - The objective of this experiment was to evaluate the metabolic status of late pregnant and early lactation dairy cows based on changes in characteristic blood metabolites. Blood samples were collected from 15 late pregnant cows and 15 early lactation cows to measure beta-hydroxybutyrate (BHB), non-esterifified fatty acids (NEFA), triglycerides (TG), glucose, total protein (TP), albumin, total bilirubin, urea and the activity of aspartate transaminase (AST) and gamma-glutamyl transferase (GGT). Cows in early lactation had signififi cantly higher (P lt 0.05) levels of serum BHB and NEFA, and lower (P lt 0.05) glycaemia compared to the late pregnant cows. High lipomobilization (NEFA>0.4 mmol/L) was detected in 6 (40%) of early lactation cows but in none of the late pregnant cows, while subclinical ketosis (BHB>1.2 mmol/L) was detected in 14 (94.4%) of the early lactation cows and 4 (26.6%) of the late pregnant cows. AST activities above 100 U/L were detected in 2 early lactation cows and in none of the late pregnant cows. TG levels below 0.12 mmol/L and glucose below 2.5 mmol/L were found in 7 (44%) and 10 (66.6%) of the early lactation cows, respectively, and in none of the late pregnant cows. Early lactation cows were found to have lower blood serum levels of TG (P lt 0.05), albumin (P lt 0.05) urea (P lt 0.05) and GTT (P>0.05) activities and higher concentrations of total bilirubin (P>0.05) TP (P>0.05) and AST activities (P lt 0.05) compared to the late pregnant cows. The results of blood serum levels of glucose, TG, BHB, NEFA and AST in early lactation cows suggest metabolic disorders associated with ketosis, and some degree of hepatic lesions, probably due to fat infifiltration. These serum parameters may have a key role in evaluating metabolic status in late pregnant and early lactation dairy cows.

High lipomobilization (NEFA >0.4 mmol/l) and subclinical ketosis (BHB >1.2 mmol/L) were detected in 6 (40%) and 14 (94.4%) early-lactation cows, respectively, and in none of the mid lactation cows. AST activities above 100 IU/l were detected in two early-lactation and none of the mid-lactation cows. TG concentrations below 0.12 mmol/l were found in 7 (44%) early-lactation and 2 (13.3%) mid-lactation cows. Glucose levels were below 2.5 mmol/l in 10 (66.6%) early-lactation and 5 (33.3%) mid-lactation cows. Early-lactation cows showed lower blood serum concentrations of TG (P>0.05), ALB (P>0.05), TP (P lt 0.05), U (P>0.05) and GTT (P>0.05) activities and higher concentrations of TB (P>0.05) and AST activities (P lt 0.05), as compared to mid-lactation cows. These metabolic characteristics were correlated with DMI and energy balance (EB).
